if you stock up on throwable and grindstone, pretty doable once you ler his 3-4 moves
I beat it with the Bramble Curved Sword Handle and Bone-Cutting Sawblade +9, your evading tactic helped me learn my mistake and I beat it on my first try. Thanks homie!

Man I really like this game but holy fuck alot of the elite enemies and even a few bosses just feel overtuned.

Beat sekiro and bloodborne no problem, this boss made me quit the game. Boss is pure trash and I will never play a souls game not by Fromsoft ever again.
Give it a chance, it is a hard one I agree 100%, but it's doable if you focus on fire damage and other physical damage throwables.
