My late husband always put raw meatballs in his sauce. That’s how is his Mom made them. Oh, how I miss that wonderful woman. They were much more tender than browned meatballs. Prior to meeting him (50 years ago) I never heard of making meatballs that way. This soup looks amazing. I’m so ready for soups & stews.
I put my carrots, celery, onion and garlic in the food processor ti grind. Put in a baggie pressed into a thin layer into the freezer so I just break off chunks when I'm making soups etc. Cooks up fast.

I made this tonight and it is so freaking good! I used impossible meat (which conveniently comes in a 3/4 lb package) and the cooking times and amounts of seasonings were perfect. I often find one pot soups need more liquid than the recipe states, but this one had the perfect ratio. 10/10!

This week is an even shorter week. It’s actually only a day and a half this week because in Louisiana we have a hurricane coming. They canceled school for the next 3 1/2 days we have school tomorrow morning, but not tomorrow afternoon they canceled the second half of the day. I have teachers and employees coming into the dorm room to help students pack up. That’s good two of my teachers do actually work two job ands

I love recipes like these ❤ still haven't found that particular little pastashape in the Netherlands. I've been looking for it ever since ive seen more soups and other (mostly Italian) recipes made with it. We have vermicelli soup in the Netherlands, which basically is my favorite because of all the vermicelli pasta in there 😁 I love (small) pasta in my soups. Not sure if cup a soup is known in the US, but its sachets of powdered soup, all you need to do is poor boiling water and wait a bit and the soup is done. I often get a bit of the vermicelli soupbase and put it in boiling water for a bit, then fish out the vermicelli and a little bit of the broth for extra flavor and add it to whatever flavor of cup a soup I'm making. At the moment I seem to keep craving mushroom soup in the evenings 😅
You make the full pound of ground beef and add more breadcrumbs, garlic, fresh basil, parm and spices and have leftover meatballs for pasta, or anything you want. That's what I would do!😊

You cook Italian like it is supposed to be. There is no right or wrong way. Use what you got. Sometime you forget something others you have a fresh herb that just came in season, throw that in.
I have a question. How do you keep the pasta in left overs from getting mushy in the fridge? I know, just eat it all the first time but, I live alone and always have left overs.
Well it really depends on how you made your pasta/the recipe that you’ve made. Let’s say if it’s just plain pasta without any tomato sauce or whatever you put on it. Just simple plain pasta right out of the boiling water, you could have them in an air tight container, with a splash of oil covering the pasta. But if you made a specific dish, like the one shown in this video for example or any pasta recipe that includes you mixing it in sauce (which is almost every recipe) you can’t really prevent the pasta from getting mushy because it has already been soaking in the sauce for a long time. My advice is just reheat and try enjoying it the way it is. But if you really don’t want mushy pasta, prepare your meal in small batches, so you don’t have left overs. Or you could always only use a small amount of pasta from the cooked ones and refrigerate the ones like how I mentioned for later so when you get hungry the only thing you need to prepare is the sauce that goes with the pasta
@@thepotatobich Thank you for the response. My method when I make a pot roast is to make the meat and vegies without the potatoes (since potatoes don't freeze well). Then I set aside the meat stew that I am going to store. Then I add potatoes to the meat stew still in the pot and cook that batch for that days dinner. I could do the same thing with this soup, make the soup without the pasta, set aside the soup that I want to store and cook the pasta in the soup left in the pot. Then the next time I want the same soup, bring to a boil what I am going to use that day, add the pasta cook and eat.
i made this exactly as you did and it came out too salty... i think between salting the sauce before adding the pasta and adding the parm rind it makes it way too salty
