I made this for dinner tonight and I have to say it was fantastic! The sauce came together beautifully and when I make it next time I think I’m going to double it. For Fall, I'll be baking these Pumpkin Chocolate Chip Muffins which are always a hit - my mom would make these every year :) Ingredients: 4 eggs at room temp 1 ½ cups vegetable oil 1 ½ cups sugar 14 oz can pumpkin pie filling (or canned pumpkin - will just be a little less sweet) 3 cups [AP] flour 1 Tbsp cinnamon (or pumpkin/apple pie spice) 2 tsp baking soda 2 tsp baking powder 1 tsp salt 2 cups chocolate chips or chunks (or if you're not into the pumpkin and chocolate combo, sub white chocolate/cinnamon/caramel baking chips) Directions: 1. Preheat oven to 400 degrees F. 2. Mix together the eggs, vegetable oil, sugar, and pumpkin pie filling. 3. In a separate bowl, combine the flour, cinnamon, baking soda, and baking powder. 4. Add the flour mix to the wet ingredients. 5. Add the chocolate chips. 6. Spray muffin tin with cooking spray. (line with parchment paper liners) 7. Spoon the batter into the muffin tin, and bake for ~15 min. Hope you enjoy if you do make these!

Any ideas on a garlic/lemon sauce that's creamy? I made an Amandine last week that this reminded me a bit of (almonds notwithstanding of course) but every time I see lemon, garlic & butter I can't help but wish I had a creamy version.
