If you've been following me, it's no secret that I love the mega gas station chain known as Buc-ee's. Not only do they have cheap gas (at usually over 100 pumps per station), but they have a supermarket-sized convenience store that has a full-on barbecue station, jerky bar, a fudge-and-nut factory, bakery, more beverages than you can imagine, the cleanest bathrooms ever, amazing souvenirs, and the best snacks! (Phew!)
Speaking of snacks, one of their signatures are Beaver Nuggets: puffed corn coated with a rich glaze that tastes like crunchy pancakes doused in butter and syrup. As of now, you can only get them at a physical Buc-ee's location and since they aren't all over the world (and only in a few states of the U.S.), I'm giving you my rendition of this addicting treat that tastes very similar. I call it Badger Brittle and it only takes SIX ingredients and about an hour to make until you're munching down!

A good number of years ago now, I dropped by the smaller Waller location on our way to Houston and the cashier asked if I had Beaver Nuggets as a bowl of cereal. Really!? Um...yes...try it. As a Gen X'er, it will punch you square in the nostalgia for our old/original Sugar Pops!
I'll be making this but adding some Spanish peanuts to it......reminds me of Cracker Jacks!!!!!!
Yum! I think you could add some cashews and pecans to make it even more rich and decadent!! Also, I’m thinking you could use your instant pot and make the caramel and stir in the Corn Pops all in the non stick pot before transferring to the oven to save yourself from cleaning an extra bowl (lazy cook here).

Hey Jeff, loved the episode...this is pretty much exactly the caramel corn recipe that my mom used to make for us. For our birthdays she would make a big batch and send it to school with us to share.

We just got a Buceee's a few weeks ago in Springfield, Missouri. I've yet to go. I just don't see why everyone is so crazy about it. But everyone was talking about these beaver nuggets and they reminded me of the cereal corn pops. So I thought I'd see how to make them.

Ive watched a few UA-camrs and as much as I love beef jerky ( they have TONS of it! )
Im not paying $3--$8 for just one thin long strip of flavored beef jerky, or $13.00 for a beef brisket sandwich.
Being Florida..off I-95, I can imagine its a mad house 24--7.😅
Im glad I saw this recipe. I just bought Corn Pops the other day.
We just went to the Springfield, MO location. I wasn't all that thrilled to go to a glorified gas station, so I wasn't looking forward to it.
I was wrong. The store is awesome. Lots of people on a Saturday afternoon, but their BBQ brisket is really good. I highly recommend you go at least once.
In a few weeks a Buc-ees will be opening in Colorado. We are very excited.

If you have dust left over from this or in your Beaver Nugget bag, save that and mix it into a vanilla ice cream base.
I have also seen where you can use Oyster Crackers instead of the Corn Pops. But either way, it sounds yummy!

I live next to a HUGE Buc-cee's. I love their fresh fried chips.
Cool idea, and it looks tasty. Seems worth a try to make it. There are brittle recipes that don't use corn syrup, but are made in a similar way. Love being able to make a snack treat instead of buying one with ingredients that are a mystery (natural flavoring) or petroleum derivatives that might be harmful to kidney function.
That would also be good with some mixed nuts or even just peanuts added to the mix. Yum.

This looks amazing! Do you think you could do a version of this that is also savory and sweet? You are brilliant, so I know you’re the person to ask.
Add in what you like, I do peanut brittle and add in some cayenne, chipotle or chili powder and I use salted peanuts. So you could add a bit of salt and your flavors.
I bet it would be good with Fritos if you wanted a savory sweet type thing.

I made something similar 2 weeks ago I added lightly salted peanuts and a 1/2 teaspoon cayenne pepper and it was delightful. BTW Virginia should be getting 2.

We usually add unsalted roasted peanuts or pecans in ours, make sure it's unsalted or your brittle won't set properly. Anyway, loved the video, take care and stay safe ❤️.

Wow!!!!!!!! I wish I could eat this as is but it's too sweet for me. I could reduce the sugars by using a recipe I found for Keto corn syrup but I'd still have to sub shortening for the butter. I'd use the original cereal, what I know of as Sugar Corn Pops, but once done I couldn't eat much of it at a time. I would certainly find out how long it keeps in the icebox! I'll print it out and make it before too long!!!!

That looks great. Wouldn't it be quicker and easier to pour your corn pops from the bowl or directly out of the box into the caramel sauce and stir them instead of pouring and scraping the sauce out of the skillet into the bowl of corn pops? And would it work to use more maple syrup and less corn syrup, or would that make it not thicken properly? Definitely looks like a snack I want to experiment with. I live in northern New York so there's no Buckee's near me

A kitnyot version of matzah caramel crunch without the chocolate. I wonder if adding KLP baking soda would do the same for the caramel I make for that.

Chocolate would melt while baking in the oven. The nuts sound good though!

Hey Jeff for another one to try is with PUFF CORN. Not popcorn. My son-in-law calls it mamas crack. Be my friend and call it something different, lol.

Not if it's granite. He set his on a cutting board.
Of course be mindful of your countertops whenever setting a hot item from the oven on it. But in this case I am only suggesting you place the parchment paper with the brittle on it. It cools within just a few minutes so I can’t see any damage being done.

Carmel corn puffs. I’d probably just make a butter sugar cream of tater pour over corn puffs and let set.
