    I've tried last night, and it's super amazing delicious!! All my family cant stop eating and they said that was the most delicious Tantamen that they ever ate!

    Chef uses regular drinking sake :) Cooking sake contains salt to avoid taxes.

    Chef just looks so happy at 3:45. I enjoy watching people cook because they usually look content and happy. Watching people doing what they love is so fun and relaxing.

      I have to imagine that it took a LOT of training for Francis to not lunge at anything that Chef cooks. He sure looks happy about this recipe though!

    You can probably use regular milk instead of the soy milk :) Using plain chicken stock also works.

    This is amazing! It's my first day in Japan today and this was the first dish I've tasted. I had to be very conscious not to swallow my tongue - so delicious it was! Absolutely gorgeous on a rainy day like today. Thank you for the simple and clear recipe. Will definitely cook for my family when I'm back to UK :D

    For those still wondering about the difference between regular and chinese style stock:
    "the basic ingredients for a Chinese chicken stock are simply slices of fresh ginger (no peeling necessary), green onions (aka scallions), & after the stock has cooked down to the intensity you want, sometimes a dollop or two of rice wine or dry sherry is added. Soy usually isn't added to the stock until it's served - either on its own, or as part of a Chinese soup."
    Meaning its what we westerners are familiar with regarding "culinary-style stock" & not broth. One can simply season their stock prior to using it when cooking.

      Marilyn Kennedy do you have housin sauce? You can substitute tianmianjian with hoisin.

    The ramen noodles Chef used in the video are not egg noodles but you can substitute them :)

    チキンストックだけでももちろん良いです。ヘルシーにしたい場合はスープの1/3~1/2を豆乳にします。山椒もピリッと辛くて美味しいですよね^^ シェフ

    For the soup base, you can use rice vinegar or grain vinegar :)

    Chef didn't have a chance to try Tahini but you can probably use it instead of the sesame paste :)

    What I love of about most Cooking with Dog's dishes are they have such a vibrant, amazing colour. It's lovely to look at and I'm sure it tastes delicious as well.

    Thank you for translating Francis!!!! I have made this twice and my husband is sooo happy!!! I can't go out to eat this as much as I was able to before so being able to make this in my very own home is such a luxury!!! Arigatou!! Oishikatta yo!! Also, I tried with udon, instant ramen and rice noodle and they all taste good because this is truly and awesome recipe!!! I have tried others, but his is by far the BEST!! Saikou!!

    Like so many others, this recipe isn't the traditional recipe, but it looks like it's definitely worth a try. I'm curious to taste the soy milk in the broth. Thanks for all your hard work and time, I really appreciate all your videos.

    Asian grocery stores are always worth a visit (so many intriguing ingredients, and usually the seafood section is cheaper and more varied!) but in fact any larger supermarket in the UK will store soy milk, sweet bean sauce, white sesame paste and ginger root.

    Flavor enhancer, like salt, or wine in western cooking. It adds depth to the flavor. I have made many of chef's recipes without it due to an allergy and they have come out fine. I would recommend adding a bit more of another liquid to keep the moisture balance.

    Love this dish and the recipe! It makes such a quick, easy and comforting meal. I used Korean black bean paste instead of Tienmienjang, hot chili Dobanjian instead of hot chili oil, and peanut butter instead of sesame seeds paste. The result is as divine! Thank you for sharing. It's very warm and relaxing to just watch the shows one after the other.

      'Korean black bean paste' aka 'Chunjang' IS Tienmienjang... same thing.

      DMTHOTH Tienmienjang is Chinese. Translated to English it means sweet wheat flour paste. It's made of wheat flour, not black beans.

      Rachel Chen Look ( en.wikipedia.org/wiki/Sweet_bean_sauce ) "Sweet bean sauce, aka tianmianjiang, is a thick, dark brown- or black-colored Chinese sauce made from wheat flour, sugar, salt, mantou, and fermented yellow soybeans. (...) Sweet bean sauce's Korean equivalent is the chunjang". There is no 'black soybean', Rachel.. people call this sauce 'black bean paste' because their color is black after produce. 甛麵醬(tianmianjiang)=春醬(춘장:Chunjang). And modern Chunjang was introduced in Korea at 1948 by Chinese-korean in Incheon. Before that, Korean called that sauce as 甛麵醬(첨면장:Chummienjang). It's same chinese-character, just different pronounce. And Chummienjang became more easier on tongue as Chumjang and Chunjang. Voila!

    Just made this for my bf and me: I'm allergic to soy milk so I substituted brown rice milk instead. Not sure how much it changed the flavor but it was AMAZINGLY DELICIOUS!!! Thank you for your wonderful recipes :)

    If you're in London you can go to Japan Centre in Regent Street. Soy milk and ginger root can be found in most supermarkets.
