I still miss her so much. I quit watching for a while because I’d get so sad. My mother died in 2013 leaving a huge hole in my life. She was my best friend. I stumbled onto Phyllis’s videos. She’s like everyone’s mother. I can’t explain it except to say she felt like a surrogate mother. Such a sweet, sweet lady.
Now this is real coconut cream pie! Too many ruin it by not using meringue. It was my preference over cake for my birthday. You were so blessed to have her. A true treasure of a lady.
Well, you use a fork or the cutter to keep from heating the LARD. Yes, lard makes a far flaker crust, and it is better for the body to break down in digestion than shorting.
RIP Miss Phyllis. I am going to make this pie. I am late to your videos but I love them. Thank you to your son for keeping these wonderful memories alive.
I have not been able to watch this channel for the last 2 years because I would get so sad. I miss Ms Phyllis so much and I think about her often. (Fun Fact) I saw a house for sale just recently in her State and I wondered if it was hers. It was so beautiful. It all looked very familiar. I loved Ms Phyllis and Mr Bucky’s house. I remember how much pride they had gardening and maintaining their home. This video popped up today and I’m so glad it did. It felt like going home and it was a lovely visit ❤
Oh how I loved Mrs. Stokes..I loved it when she would sometimes say hold on to your ears it's going to be a little loud while the mixer is on. She was so considerate of us! I had a wonderful Mom too we both were blessed... she spoke of you often and your children..I could tell she was so proud of you all. I can't believe she showed up in my feed today but I'm glad she did.. this is a video that I have never seen before and did not know about tempering the eggs and the milk...I just learned something new today. I miss her so much....love and hugs to all that are missing her today. I learned so much from her even today. I loved it when they would sit down together for dinner and have ice tea with their meal and always had dessert... Mr.Stokes loved it.
I will find a day when my house is quiet, just me at home. I’ll need that quiet to focus on following Phyllis’s instructions! I so look forward to making and eating this pie. Look at the genius of this woman!!! Saran Wrap to contain the crust, and then adding the meringue all around the outside of the pie! I would have made the biggest mess doing that if Phyllis hadn’t taught me otherwise. Even though you’re no longer here, you are still such a wonderful influence and teacher. I love and miss you so much. I feel like we knew one another personally and we could drop by to see one another at home anytime. 🥰🥰🥰🥰
I learned how to make pie crust and pies from my grandma and she always used plastic wrap to roll out her crust. I knew women who rolled their crust out on a floured cotton towel. It works but you need to flour it just right. Yup meringue sealed to the crust otherwise it shrinks and pulls away in the oven.
I just wanted to say l really miss you and Mr Bucky, Phyllis! You brightened many a day with your lovely videos and your voice and smile. Thank you for your continued sunshine❤
Oh, how Wonderful a Cook Ms Phyllis was! I saved this video and had to watch it again, and forwarded it to Family today, as its so Amazing and Delicious! Thanks to her lovely Son for keeping her website open after We Lost Ms Phyllis! Bless All of You, in Jesus' name!😋💕❤❤😮😫🎂
Thank you, looks delicious. My mother made the same pie growing up in the 50's. Been looking for her recipe for yrs. What do you know. FOUND IT🤗🤗🤗🤗❤️❤️❤️❤️❤️😍😍😍😍😍
I learned so many different great recipes from Phyllis, but I must say, this pie crust recipe is the very best of all. She made making pie crust so much easier, no mess and a delicious pie crust that's never failed me. I always made pie crust like my Mom did, but this pie crust is just as much delicious as Mom's but just dramatically easier and NO MESS. I sure miss Ms Phyllis. I'm just glad she's no longer hurting in pain and she's up in heaven with Mr. Bucky, the love of each other's lives. Linda from Texas.
My grandma would use half lard half shortening, it came out light, flaky and sure tasted good. The lard really adds a nice flavor and it's not like you're eating a lot so I think it's acceptable.
This just popped up in my feed. I've watched you and Mr. Bucky for years and you guys are sorely missed. Whoever is running this channel now praying blessings over you and your family.💜
I love Phyliss recipies and her soothing voice. I learned 2 things. There is such a thing of frozen coconut and coconut cream pie deserves meringue. Never knew about either.
Phyllis reminds me of my precious mom, who has been gone over 20 years. She loved to cook. She would have enjoyed these videos so much. Maybe they’ve met up in Heaven and are cooking up a storm. Stephen thank you for keeping this cooking show open.
Only discovered this recipe video today. Saddened to learn of her passing. I will make this deep southern American coconut cream pie here in Northern Ireland in her honour. I've even ordered proper crisco online to ensure the ingredients are perfect.
This recipe is so much like my maternal Grandmother's cooking. Always a labor of Love & served up with welcoming Smiles. I miss her so much, & didn't get any of yer recipes. Bittersweet memories of Phyllis this Christmas 2022. Thank you for keeping her memories & skills alive.
Ok I did it, I made it and it turned out at least it looks beautiful I am so proud of it. The custard tasted Excellent and my meringue was perfect I was so so proud of myself I never done none of this before I'm 63 years of age but I went to work when I was 15 so I was never in the kitchen bacon with my mom so I want to say thank you Phyllis I know she's not with this but she was in the kitchen with me tonight in spirit and so is my mom so thank you Phyllis and Mom you'd be so proud of me. I tried to post a picture but I am not sure how to. But again Thx so much , I am looking forward to more recipes especially the chocolate pie and the brownies and well a lot more goodies. 😚
Oh my word! I am practically salivating watching dear Phyllis make this pie.... my all- time favorite! Colonel Steve, thank you so much for continuing to run your sweet mama's cooking account. I follow a lot of cooking accounts on both IG and YT, but this is my very favorite cooking show by far. Dear Phyllis makes it seem so easy to cook and bake, I'm not hesitant to try any of her many recipes. It's awesome that you are following in her footsteps and sharing your own cooking episodes with us. I appreciate it so much! God bless.
Oh my!!! I just had a moment of joy when I seen this recipe with Phillis on my feed, then a second of sadness when I remembered she’s not with us. Yet I am so Glad she is Home with Our Heavenly Father & Mr Buckey Rest in Paradise Phillis ❤️😊
Phyllis everything you cook reminds me of my mom who passed last year at 92. She was a wonderful cook. We were so thankful for our delicious foods. I don't have to worry about your recipes being good. It's like I'm watching my mom cook or bake. Thank you for your utubes.
I made your pie today for my sweetie on Valentine's Day. I thought first of you when looking for a recipe for coconut cream pie. I love watching your videos and listening to your sweet, calm voice. You are missed.
I made this today and it looks great. I swear this is the best utube recipe I've ever encountered. Phyllis, you're great. Here is a written version the way I made it today: Old Fashioned Coconut Cream Pie (1950’s) By Phyllis Stokes on utube CRUST Preheat oven to 425 deg. 1 ¼ cups all-purpose flour 1/3 cup plus 2 tablespoons Crisco 1 teaspoon sugar ¼ teaspoon salt ½ teaspoon baking powder 1 large egg yolk 3 tablespoons water FILLING In sauce pan, heat 1 cup sugar 1/3 cup all-purpose flour ¼ teaspoon salt 3 cups whole milk Add above filling into bowl of yolks a halg cup at a time to prevent yolks from cooking. 4 egg yolks, slightly beaten 1 pkg (6 oz.) frozen coconut by Bird’s Eye (save 1 TB for top) 1 teaspoon vanilla ½ teaspoon almond extract 3 tablespoons butter MERINGUE TOPPING 5 egg whites ¾ cup sugar 1 teaspoon Cream of tartar Beat til sugar is all dissolved, add: 1 teaspoon vanilla 1 tablespoon coconut for on top, saved EGGS: Utensils must be grease free. Use a glass bowl with egg whites. Divide eggs having yolks in a small bowl (I used a 2 cup glass measuring cup). And the whites into a large mixer bowl. Its best if eggs are room temp to use. CRUST Large pie pan. Mix flour sugar, salt and shortening together. Mix egg yolk with the water and add. Shape flat and round. Place dough between Saran Wrap, roll out 2” larger than pie pan. Remove Saran Wrap on top and turn over into the pie pan. Remove the plastic and shape edges of pie dough as desired. Press it nice and flat to pie pan. Fork holes in crust. Bake at 425 deg. about 15-18 minutes or until slightly browned. FILLING In a pan, place the sugar, flour, whisk, add salt and milk on medium-low heat. When it begins to bubble on sides of pan and thickened stirring constantly. Remove from burner. Add the coconut saving out 1 TB for topping. In a bowl, beat the 4 egg yolks slightly to blend them. Begin to whisk the mixture from the pan into the yolks very gradually until about half of it is incorporated into the yolks, about one-fourth cup at a time, stirring after each addition. Then add the rest into the filling. Add the vanilla, almond and 3 TB butter into the filling. Whisk well. Cook until filling begins to boil and thickens. Spoon into prepared pie crust. TIP: If filling scorches, transfer it to a clean pan to finish cooking after you add coconut, flavorings and butter. I used a heavy pan and kept stirring with a rubber spatula = mine didn’t scorch. MAKE MERINGUE TOPPING Mix a little of the sugar with cream of tartar. Add this to the unbeaten egg whites. Beat with electric mixer until soft peaks form. Add sugar gradually while beating. Beat a long time until sugar is dissolved. TEST: Press some between your fingers to make sure that no sugar crystals remain. Add vanilla. Spoon meringue around edge of pie over hot filling, making sure it is sealed to the edges. Bake at 375 degrees about 10-15 minutes or until meringue is browned and coconut is toasted. Chill before serving so filling thickens. By Phyllis Stokes on utube: ua-cam.com/video/8Z3385gP0h4/v-deo.html
Hello Ms. Phyllis, You are a wonderful fill-in for those that don't have a mother or aunt or just someone in their life to teach how to make beautiful tasty recipes. Thank you, your a very warm and lovely teacher God bless
I often go back and watch her videos. If only we knew then what we know now. I hope those that watch this, have peace and no anxiety in their lives. Pre-pandemic was a pretty good world. May this find you all well and loved. ❤️ RIP Phyllis. I miss you.
I always love your diy recipes , tyvm for all you've done for us !!! ♡♡♡ miss you but so happy that your legacy continues ! Wish I had something like this from my mom to watch :'( love ya
How refreshing that you make your own pie crust! I had just watched someone make a coconut cream pie with frozen bought crust, 2 boxes of jello pudding and cool whip. My mom taught me how to make pie crust when I was 15 and that is what I always do. I also make the rest of the pie from scratch and feel sorry for people who have never had this from scratch! Enjoyed your video!
Omg, how many tons of Crisco did we eat growing up!? I love Miss Phyllis, she keeps all those memories and delicious eats alive! I miss her, but thankfully, we have her videos.
We didn't use baking beans in our pies years ago I remember my mum putting an old plate on top the pie pastry before putting in the oven, it worked great. Love watching your mums cooking vids she was a special mum I'm sure.🇬🇧❤️ I have subscribed.👍🏼
Pylillis you make me so happy watching you cook the good recipes from the 50s. You make me think of my momma and seeing her cooking pies. My momma went to heaven in 2016 so thank you for the memories.❤️
Yummy. Wow the price of Crisco has risen dramatically as it has been 15 years since I last purchased it. Appreciate how you get right to the recipe. My PYREX is the same as your pie pan. Thank you Phyllis
I have seen so many pie crust recipes, but none like this one. All the rest are more of a pain in the butt to mess around with, hence I hate making pie crusts. But this one, I will give one last try. Thank you Phyllis, you were a special lady & we surely miss you.
I miss her so much I learned how to cook and make cakes and pies because of her I never have time to learn how to cook good meals for my family. It was always the same food and they were tired of it. Thank you for teaching me how to cook. she was a very special person rest in peace.
Once again thank you Phyllis for this extraordinary recipe. I first made this pie due to a pregnancy craving in 2018. Now I am making it again for my husband's sweet tooth and military coworkers. Your video is great!
Hi Phyllis, I have such great memories of going to a local restaurant when I was in college to have a slice of coconut custard pie with meringue and a cup of coffee! I look forward to trying your recipe soon. Thanks for sharing and for the great detail that you put in your videos! Blessings!
I'm going to use this recipe this weekend to make this pie and I am so glad that you showed me how to fix in case it sticks to the bottom I sure miss you but I still use your recipes
Phyllis, your a genius. I have tried to make pie crust for years and haven’t been able to get it right. With your recipe and tricks I got it. I made the coconut cream pie yesterday and had it for dessert tonight and it wasn’t runny at all. Wish I could send you pictures. Thanks again for all of these videos, my wife and I love them. We have planed on videoing our family recipes on UA-cam and giving it to them on their wedding day to always have. Thanks again and tell your husband I would love to hear more of his bible devos.
i bet it tastes as good as it looks! i love coconut custard pie the best.pie making like this is a lost art,my grandma made the best pies.now that the older generation are leaving us these skills and all the tips/tricks need to be learned before they dissapear like the wonderful ladies that made them
Oh my my my, that looks good enough to eat! It's a great looking coconut merengue pie and I remembered all the things you said about those 50's pies and even those different brands a types if coconut. My mother was old school and wouldn't dare use "pre ground coconut" but always insisted on grating fresh out of the shell flesh! My sisters and a sister-in-law would use pre shredded. Thanks for sharing! I now have an overwhelming urge for coconut merengue pie!)
Mrs. Stokes I love your creativity. You have hundreds of recipes and all of them that I have seen are great. God Bless you for giving us wonderful videos to learn from and enjoy. You make being in the kitchen fun not work. Respectfully, Mrs. Vu
I like Crisco (butter flavor) for my crust too. My MawMaw used lard. We made our own.♥️ And always fresh laid eggs! She started teaching me to make these when I was 5 years old. I’m 74. I’ve made a few🤭 Thank you for sharing the past♥️ 3:49
This is the type of traditional American recipe I have been looking for. I have saved this for future help. I will be making her recipe here in Northern Ireland, bringing a little of the deep south over to Ireland! Thank you so much.
Thank you for the step by step video. I can bake a lot of things, but pie is not my thing. I am making this for my husbands 60th b-day. Upon request.... You have a very soothing voice to me and I enjoyed your video. Wish me luck on the pie. Sincerely, Rhonda
My dear friend, I can't tell you how much I enjoy watching you. I ,too, bake from scratch. I always have. It is becoming a lost art. You and Mr. Bucky have given me hours of enjoyment. I have a 15 yr old grandson that has been baking and cooking with me since he was 5, standing on a footstool. My prayers and love to you both.
I Really Miss Mrs. Stokes, I think about her all the time. I Totally loved her Videos. And Today I made her 1950's Coconut Pie. When I make a Coconut Pie, I only use her recipe. I make it along with her. All the way. I made my Pie crust first. And then the Pie. It always turns out Perfect.
Phyllis, Coconut pie was my Mother’s favorite, but she rarely had the time to make one because she had to work to support the family! I wish she was here so I could try and make her one using your recipe! It looks so good! I wonder if you have pie in Heaven! I guess maybe you don’t need to eat if you don’t have a human body anymore! I suppose I’ll find out soon enough! You’re still with us in our hearts and minds! 💜
Thank you so very much. You are very patient and very easy to understand. Thanks for taking your time to share your skills with us all. I cannot wait to try this receipe. You really should be a teacher because you are great at teaching.
Love her videos. She has all the ingredients ready we don't have to sit there and watch for 10 minutes her chopping vegetables are watching the chicken lay the egg
This is my all time favorite pie so I decided to give it a try myself. Your video appears to be the best on UA-cam. Some of the so-called coconut cream pies are not even near what I call a coconut cream pie! Thanks for your video!
I thank you so much for your recipes it reminds me so much of my mother's cooking my whole family is from Georgia and your recipes and baking reminds me so much of home I thank you for giving me A Taste of Home God bless you
You can certainly use the dried coconut. We had to let that pie cool for about 4 hours and still the filling was a little runny so dried coconut might make the filling set up faster. Walmart carries the frozen coconut in the frozen food section where you find the frozen fruits. Sometimes you can find it up under the apple turnovers in that same location. Good luck, Phyllis
Back 10 years later. I think I will finally make this :) I will have to find shredded coconut. Perhaps they'll have it in the Asian supermarket, because I'm pretty sure the normal supermarkets around me don't have it. I miss your mom's cooking...
's Phyllis Your frugal cooking is absolutely awesome, the food you make is really delightful. It's so great that the older recipes are share with use the younger generation. Viva for you Phyllis. Send my greetings to Mr Bucky, love the way he enjoy your meals.
Thank you for taking the time to show us this old recipe. I love coconut cream pie and yes it is real life recording, so mishaps do happen. In the end, it's a great looking pie. Thanks again
I have been making this pie since I was about 10, my dad taught me he was a cook from Texas, we could not afford butter always used Crisco I use Butter Crisco now, only difference, I made two pies every weekend for seven years for my husband's dad, only difference was no calf slime ( meringue ) lots of old farmers don't like meringue, I would toast coconut and put on top. Sorry I never found these videos.
Yes you are very awesome lady you remind me of my mother she always cooked for the five kids in the family and this and that made her breads or cakes her pies and everything I grew up with just great cooking and a good wholesome meal every year thank you for mothers like you
I still miss her so much. I quit watching for a while because I’d get so sad. My mother died in 2013 leaving a huge hole in my life. She was my best friend. I stumbled onto Phyllis’s videos. I just found your UA-cam Channel, I love this, real life cooking. Thanks so much
I made this today and it looks great. I swear this is the best utube recipe I've ever encountered. Phyllis, you're great. Here is a written version the way I made it today:
Old Fashioned Coconut Cream Pie (1950’s)
By Phyllis Stokes on utube
CRUST
Preheat oven to 425 deg.
1 ¼ cups all-purpose flour
1/3 cup plus 2 tablespoons Crisco
1 teaspoon sugar
¼ teaspoon salt
½ teaspoon baking powder
1 large egg yolk
3 tablespoons water
FILLING
In sauce pan, heat
1 cup sugar
1/3 cup all-purpose flour
¼ teaspoon salt
3 cups whole milk
Add above filling into bowl of yolks a halg cup at a time to prevent yolks from cooking.
4 egg yolks, slightly beaten
1 pkg (6 oz.) frozen coconut by Bird’s Eye (save 1 TB for top)
1 teaspoon vanilla
½ teaspoon almond extract
3 tablespoons butter
MERINGUE TOPPING
5 egg whites
¾ cup sugar
1 teaspoon Cream of tartar
Beat til sugar is all dissolved, add:
1 teaspoon vanilla
1 tablespoon coconut for on top, saved
EGGS: Utensils must be grease free. Use a glass bowl with egg whites. Divide eggs having yolks in a small bowl (I used a 2 cup glass measuring cup). And the whites into a large mixer bowl. Its best if eggs are room temp to use.
CRUST
Large pie pan.
FILLING
In a pan, place the sugar, flour, whisk, add salt and milk on medium-low heat.
MAKE MERINGUE TOPPING
Mix a little of the sugar with cream of tartar.

Hello Ms. Phyllis,
You are a wonderful fill-in for those that don't have a mother or aunt or just someone in their life to teach how to make beautiful tasty recipes.
I miss you.
❤I miss her too. She kept it exciting and real.
Mrs. Stokes you make all your videos such fun. I enjoy them very much. You would have made an excellent Home Economics Teacher.
I haven’t heard this lovely voice in quite some time. I’m glad this came back up on my feed. Stilll missing you. Sending love!
I loved Phyllis she is the best teacher of cooking..miss her so!!
I miss you. Hope you son will share more recipes. I lost my recipe in our move and appreciate this one. Ty is in heaven.
Thanks Miss Phyllis. I still see your beautiful meal presentations with the dinnerware and all.
MAY YOU REST WITH LOVE IN HEAVEN MS. PHYLLIS. LOVE YOUR VIDEOS WILL CONTINUE TO WATCH YOUR CHANNEL. YOUR RECIPES SRE PRICELESS.
MUCH LOVE
Coconut pie is my favorite, my mouth was watering toward the end. 👍
I FOREVER WILL MISS HER I ALWAYS SAW HER COOKING SHE HAD ONE BEAUTIFUL PERSONALITY ALWAYS 💕 LOVE💕MISS PHILYLS
A+ on the prep of your ingredients. That was my favorite pie my mother made me as a child. I have had a slice in forever. Yummy!
Yum , no one cooks like you do anymore. I miss good southern food.
I miss you but aren't the angels in heaven rejoicing to have you home 😢
Phyllis, your a genius. I have tried to make pie crust for years and haven’t been able to get it right. With your recipe and tricks I got it. I made the coconut cream pie yesterday and had it for dessert tonight and it wasn’t runny at all. Wish I could send you pictures. Thanks again for all of these videos, my wife and I love them. We have planed on videoing our family recipes on UA-cam and giving it to them on their wedding day to always have. Thanks again and tell your husband I would love to hear more of his bible devos.
What a perfect gift! My mother-in-law did that for my late husband and me for a Christmas present!
i bet it tastes as good as it looks! i love coconut custard pie the best.pie making like this is a lost art,my grandma made the best pies.now that the older generation are leaving us these skills and all the tips/tricks need to be learned before they dissapear like the wonderful ladies that made them
Oh my my my, that looks good enough to eat!
Vu
Mary Vu ...
OHH WOW HONEY,
THANK YOU SOO MUCH FOR TYPING THIS OUT👼🏼
🙏BLESS YOUR PRECIOUS💓..
GOD BLESS YOU HONEY!!!!
Phyllis this heavenly, and you are an extraordinary communicator !
Love watching all the old fashion food videos Phyllis. Thank you for your time and great job
I thank you so much for your recipes it reminds me so much of my mother's cooking my whole family is from Georgia and your recipes and baking reminds me so much of home I thank you for giving me A Taste of Home God bless you
I like that you show written ingredients , its easy to pause and scribble it down ..thanks for sharin !
i enjoy watching these videos, i like the way she would show step by step instructions
Looks absolutely delicious. Coconut cream pie is my favorite
Oh my gosh. So good to see and hear her again! I never knew her but I always watched her and her husband. I feel I know her! May she rest in peace!
Oh how I miss this sweet friend ❤
Back 10 years later. I think I will finally make this :) I will have to find shredded coconut. Perhaps they'll have it in the Asian supermarket, because I'm pretty sure the normal supermarkets around me don't have it. I miss your mom's cooking...
's Phyllis
Your frugal cooking is absolutely awesome, the food you make is really delightful.
Miss this lady so much.
You are a good teacher Phyllis, you leave no stone un-turned.
Another beautiful creation .......I would dearly love a nice slice of that!!!
Yes you are very awesome lady you remind me of my mother she always cooked for the five kids in the family and this and that made her breads or cakes her pies and everything I grew up with just great cooking and a good wholesome meal every year thank you for mothers like you
How nice to see Phyllis's video She was a great lady.Sure do miss her
