This is my favorite pie. My mother use to bring me home these from her job when I was a kid. Fell in love. Still one of my favorite dessert picks. Homemade is even better. I don't make it a lot for family gatherings as many do not like coconut. Not sure how people hate coconut? But maybe I should make it🤷♀️ more for me. ❤
I went down to the Amish Country this past summer and got a slice of their Coconut Cream Pie. I almost did cartwheels. LOL Coconut Cream is one the all time favorite pies. SO Delicious. Could go for a slice with my cup of coffee I'm having now.🥰🤪

OMG YES!! 😁Toasting the coconut will give the coconut a definitely different flavor. If you want to know what flavor you'll get.. then toast a little bit in a frying pan and try it along side the untoasted stuff then decide if you want to toast all, some, or none of the coconut for the pie. If you use a crumb crust pie you could also substitute coconut for some of the crumbs.
1) Combine coconut milk and regular milk in a saucepan; heat gently. In a bowl, whisk egg yolks and sugar until pale yellow. Add cornstarch, mix well. 2) Gradually add half the hot milk to the egg mixture, stirring constantly. Pour back into saucepan with salt, cook low heat 7 mins until thickened. Remove, add butter, vanilla, and coconut extract. Let cool 45 mins. 3) Fold in coconut. Pour into baked crust, refrigerate 8 hrs or overnight. 4) Serve with whipped cream and toasted coconut. @@bjrgstre-mauger5398 That's unlikely to work because the coconut isn't naturally sticky, so the sugar will just fall off the coconut. If you only want to mimic the sugar level, then your method would work just fine.
It's pretty easy to make at home. Check my comment to Flying Dutchman for what I do when I make it. Have fun making it! It's way better hand made than store bought IMO
@cf3129 you'll need to use whipping cream, double cream or heavy whipping cream depending on what it's called in your country. You'll need at least 30% fat to whip it into whipped cream.

My custard comes all together with cold ingredients...no tempering needed for the eggs..might not be professional..but it works great
