My favorite too! Especially with the toasted coconut. 😋 My husband does not like coconut so I don't make it unless I'm having company or I'll eat the whole pie! His favorite is chocolate or the Amish peanut butter pie so always have to make 2 pies. Have you ever made the Amish peanut butter pie with the peanut butter crumbles? It's a great pie also! I can send you the recipe if you like? It's just the same vanilla pudding with the pb crumbles layered in and on top.

I use powdered sugar when making my whipped cream & add a little vanilla. The powdered sugar melts right into the cream. So good!
