All right I did this recipe yesterday and I have to say it was the best ham I have ever had in my 50 years. My father put it in his top 3 but he has been eating ham for a good bit longer than I have. It was beautiful when I pulled it out of my smoker and the flavor just about sent me to heaven happy. On a side note my brother lives in Texas and travels extensively so I gave him the address and told him to eat there next time he is in El Paso. I let him know this is where I've been getting the recipes I've been using.
Joe, I know this is an older video, but I wanted to give an update. I've made the honey/butter glaze twice now and the most recent one I also added a splash of Bourbon to the glaze. Adds just enough of a slight Bourbon flavor and is worth considering. For those concerned about the alcohol, it has long evaporated in the smoker before you pull the ham to serve, but the flavor hint still remains. Give it a tray (and this is a super easy glaze that Joe used and it tastes grated "as is" also).
I've done similar, used about 2 shots of Jim Beam in my glaze, which consists of Apple juice, brown sugar, honey, and some dry rub, simmered for about 20 minutes until it coats a spoon. Gotta say the bourbon definitely adds to the flavor profile of the glaze. Everyone seemed to love the ham, now I'm expected to make it on every holiday 😂

Have you ever thought about putting a roasting pan underneath to catch the drippings and glaze to use for later? I put a glass pan underneath and still use a rack on top for easy lifting or moving.

I would use the chips of your choice and smoke it until the internal temp hits 150°. These hams are already pre cooked so it comes up to temp fairly quick. You don't need to keep adding wood chips, probably just one dose is enough. 👍

Congratulations Sal! Absolutely a pork shoulder is perfect. Very little trim if any. Smoke it until you have a nice dark bark, then wrap it until it's at least 205° and tender. 🤘
I'm about to smoke a ham but I have a few injections I make for mine. But you give me a great base to work off of. Also if you smoke mac and cheese, the next day you can pan fry the left overs and make a grilled ham mac and cheese sandwich with Chipotle creamy sauce you'll thank me later.

Double smoked is it. My grandfather was really adamant about Double smoking. He said store bought hams just didn't taste right. Of course there weren't the selections we have today.

Use plain water to wet the surface a bit. Even butter will work.
Salted or unsalted butter?
Play it safe and use unsalted. You can always adjust the salt content in your rub or glaze.
