Woeber's makes a dandy Horseradish sauce too that goes well on roast beef sandwiches among other things! I wish I would've thought of that (smoked ham that is)! I wonder how rum would be on it because I'm not fond of whiskey!

Man...thats a hodge pog of things collected through the years...its actually a 1/4 sheet pan with a 1/4 sheet pan cooling rack...

Thats a big butt...I would recommend 250 and that might take up to 16 hours...bring that big...if you wanted you could easily do 275 as well...
