Dianna Depaz Hi Dianna! I get the yellow chilli paste from Pennisi Cuisine in Woolloongabba. You can use any type of soy sauce in this recipe. I like to use the Kikkoman brand, but literally any type will work. You might need to add a bit more salt at the end if you use one with low sodium.

Hola amiga!! That is great to hear!! Aji amarillo is fruity and a little grassy (like summer in a chili). I would recommend using a paste made of habanero or scotch bonnet chillies as they have fruity flavour profiles that perform well as taste substitutes for the aji amarillo. If you can stand the heat, these are your best bets to maintain a recipe’s flavour intent. If you want a milder version I would recommend using Serrano pepper or just a plain red chilli paste. The flavour profile is quite different so it won't taste 100% how it is meant to.
Hola Fernando! Yes, some recipes do add green onions but my family’s recipe doesn’t. I do add beef stock in the recipe to get lots of juice because the juicer the better!
