Lomo Saltado Peruvian Stir Fry I Good Times With Jen

  • You'll truly wish you've been eating fries this way all along.
    INGREDIENTS:
    1 1/2 cups french fries, baked or fried
    1 pound sirloin steak, cut into thin stirps
    2 garlic cloves, thinly sliced
    1 red onion, cut into thin wedges
    4 plum tomatoes, cut into wedges and seeded
    3 tablespoons aji amarillo paste
    1/4 cup soy sauce
    2 tablespoons red wine vinegar
    2 teaspoons cumin
    Cilantro to serve
    Salt & pepper to taste
    Oil for pan
    STEPS:
    1.) Heat oil in a skillet on med-high heat. Pat dry steak strips and season with cumin, salt, pepper. Add beef to brown for a few minutes.
    2.) Add onion and garlic. Stir and saute, until softened. Add aji amarillo paste, soy sauce, and vinegar. Mix well. Add tomatoes and cook for another 2-3 minutes. Sprinkle in cilantro.
    3.) Serve with fries and rice.

    Yes my husband is Peruvian and Chinese and Italian food have influenced their food quite a bit, everything is soo good!

      Excuse me? Stolen? Wtf are you talking about? There is traditional peruvian criollo food, prehispanic food and fusion cuisine, the latter from people who arrived to Peru and adapted their customs to what they found in the country. Back up your comments now you little punk!

    I used to work in DC and my executive chef made this for lunch one day. It was so yummy that I was dreaming about it just the other day and searching for a recipe. This is the best surprise 😁🙌🏽

    Peru is in South America, but it's the easternmost country, with a significant coastline to the Pacific! Which is why Japanese, Chinese and the culture of other areas of Asia is so important as an influence in Peruvian culture - lots of immigrants, and for over a hundred years, now!

    Made it for dinner & we love it!!!! Didn't have aji amarillo so I made my own by charing some sweet yellow & orange peppers, skinned & chopped it, added olive oil & spices & blitzed it. It turned out great. Thanks for the recipe!!!

    It's essential to add ginger and serve always as hot as possible. That will make a explosion of flavour in your mouth. And obviously the best option is the WOK.

    Lomo Saltado is so delicious! But we also have Ají de Gallina ; ceviche; pachamanca ; arroz con pollo ; jalea mixta; anticuchos; papá a la huancaina ; etc hahaha thanks to share ! :)

    Marinate steak in 2 Tbsp soy and 1 and 1/2 tsp cumin. Grill steak, get a nice char on the outside, but keep medium rare on inside. Slice steak, add 1/2 tsp cumin, continue with video, but add ginger and vinegar (which was not shown) and you have a truly amazing dish. Make sure to infuse your white rice with garlic.

    I use a lil bit of red wine instead of vinegar. Coriander or spring onion.

    Looks so good.. when you said we could use bell peppers instead.. did you mean chopped? Or blend it to a paste?

      Aleera DoBlah chopped and add your favorite spicy sauce. Usually in peru de ají amarillo is chopped into strips in this dish but since it’s hard to get the whole pepper in the US we just replace with the paste

    Quick question here, I noticed there is red wine vinegar in the list of ingredients in the description box however she doesn't use any. Does that mean it's not needed and for those that have tried this, what does the vinegar really add ?

      I usually add white vinegar in small amounts. It is common in lomo saltado.

    Really appreciate your enthusiasm for peruvian food, but this dish is called “saltado”
    Because you actually make the lomo to jump, and help it obtain its classic smoky flavor, not only the tomatoes can’t be mushy, the onions can’t get overcooked either, as you said this is kind of a stir fry, and what you show on the video is kinda far from that.

    Lomo saltado is just your basic Chinese stir-fried beef, nothing Peruvian about it. It has mainly chinese influence (wok, soy sauce, rice, oyster sauce) so Peruvians better stick their tongues inside their mouths. There are better dishes than this Chinese dish.

      Lomo Saltado has existed since before the Chinese arrived to Peru and before they opened their first Chaufa restaurant. The rest are additions they made to make it more palatable to them and the wok and the rice are not even essential ingredients. This dish has been in peruvian cookbooks since 1903 idiot.

      @@etchalaco9971 Chinese immigration started before 1903, so probably it was already brought by the Chinese. Mostly all Peruvian cuisine is just copies from other countries dishes, that's sad.

      @@etchalaco9971 Easy to prove. Just go to any chifa or chinese food rest and try to find "lomo saltado" in the Menu. You won't find it. It's a creole dish. Since when french fries make part of Chinese gastronomy???? Ignorance is rampant in UA-cam no doubt.
