Mediterranean Polenta Stack Recipe - Vegan & Gluten Free!

  • This vegan polenta recipe will leave your mouth watering! These Mediterranean stacks are so easy to make, look stunning and taste AMAZING!!!!
    This recipe is gluten free and great for anyone wanting to eat a whole food plant based diet.
    Polenta dishes such as this are so satisfying and great for lunch, dinner, snacks... or any time at all really!
    Give it a go and let me know what you think :-)
    Ingredients:
    1/2 cup polenta meal
    1 1/2 cup water (or vegetable broth)
    3 tbs nutritional yeast (optional but makes it taste cheesy and adds some B12 to the dish)
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp celtic sea salt
    1/4 tsp white pepper
    2 tbs hummus
    ----------------------------------------------------------------------------
    Toppings:
    Avocado Mix:
    1 avocado
    1/2 tsp celtic sea salt
    juice and pulp of one small lime
    2 tsp chopped garlic
    2 sliced roasted red peppers (no oil marinated in a vinegar mix - store bought is fine)
    1/2 cup diced tomatoes (I used Roma)
    1/2 purple onion diced
    Cilantro (or any other fresh herbs)
    Balsamic Vinegar
    Enjoy xx

    *amazing*. i LOVE polenta & i love avocado/guacamole. all the ingredients you used are things i love. this would make an absolutely perfect meal. i can't believe such a gem is vegan. healthy & cruelty-free! how lucky are we to be able to eat such delicious food. thank you Anya, i love your videos :) btw i would love to try this with all 3 topping suggestions: balsamic vinegar, chili sauce & pesto. pesto would be amazing!

    What I like about your recipes is that they make enough for about 2-3 people, not 4-6 people. This means that I don't have to eat the same thing for a whole week. Dividing up recipes in half never really works. Thanks.

    I've been wanting to make these ever since I first saw the video a year ago. I finally got the mini springform pans, and I made them this weekend. OMG! These absolutely were amazing! My husband loved them, and he is an omnivore. I'm thinking I would like to make a double batch next time and perhaps Press it into a square pan? Put the toppings on, and then cut it like you would brownies. Would that work? What toppings would you suggest to make this Italian? Mexican? For this one, I'm thinking Greek, with vegan tzatziki, olives, maybe lemon instead of lime juice? Thank you Anja, these truly are AMAZING!

    I just made this but with some taco seasoning in the polenta mix and no Hummus. Then I layered it with the mashed avocado, sliced tomato and a corn, black bean , tomato, red bell pepper salsa, red onion and sprinkled a little nutritional yeast over the top and cilantro. I also made double the polenta mix and put if in a rectangle slice tin lined with baking paper so i could lift it out and slice it in to squares. I want to post a picture here but not sure how :)

      I bought the tins at a cake supply store... they are moulds for mini cakes :-)
