1 pound pork neck bones
** for blanching **
2 slices ginger
2 stalks green onion
¼ cup rice wine
4 to 6 cups water for blanching
4 cups water for making the soup
1½ pounds winter melon, diced about ¼″ size
½ tsp salt
1 Tbs. soy sauce
2 Tbs. sesame oil
¼ tsp. white pepper
2 oz. carrot, julienned into thin strips
1 egg, beaten
2 Tbs. chopped green onion
Slurry
1 Tbs. corn starch

Yes, definitely. You can also used beef neck bone or veal neck bone. The secret is that bone meat, will be the best for making tasty broth. That is what restaurant do. thank you for watching.

Hello Chef. I never heard of winter melon before. I googled it and once cut in half, it looks like a large cucumber. I'm sure it's not similar to bitter melon? Maybe you can shed some light on that. Earlier his week, I made beef snowpeas with water chestnuts. Me and the family loved it. Tomorrow, I'll be making a pork and kale stir fry along with mushrooms and peppers. It look like large fruit melon. green thick skin with white inside. big one can grow up to 10 pound. with white seed inside. Thanks for asking and thank you for watching.

I will have to make it, hopefully I don't have to buy a whole winter melon, as you know they get huge and way more than we can eat lol.
Your correct. They sales huge cut / slice of the winter melon in the grocery. I bring one cut to that grocery vegetable preparation room and ask to cut it smaller portion for my need. LOL.. thank you for watching.
