- For Dim Sum lovers. Here is one delicious entry that you must try. Pork belly braised into tender stage with sweet soy sauce. Over rice for complete meal itself. Enjoy.

2 lbs. boneless pork belly, with skin
** For blanching **
5 to 6 cups water
5 slices ginger
3 stalks green onion
⅓ cup Shaoxing rice wine
** For braising **
3 Tbs. peanut cooking oil (for its high smoke point)
3 Tbs. rock sugar
3 Tbs. Shaoxing rice wine for drizzling
3 Tbs. light soy sauce
2 Tbs. sesame oil
5 to 6 cups water
3 stalks green onion
5 slices ginger
3 stalks green onions
5 slices ginger
spices:
3 star anise
3 bay leaves
1 cinnamon bark
1 tsp. whole black peppercorns
10 whole cardamom pods
Also needed:
3 cups steamed rice kept warm during cooking

Hello Chef. Although, the family cannot eat pork belly, I am amazed how you combined it with the sweet gravy and topped it off over with white rice. I continue to make Chinese at home and the family continues to love it. In fact, the following weekend, it's my mother in law's birthday so I've been in discussion with my girlfriend about a Chinese dinner. Nothing's been decided but what we do know is, it will be a 3 course meal. I think she will love it with some invited guests. Until next time Chef.

This is not salty dish. BTW, I am already advance senior citizen and my PCP direct me to away salty food. Hence, all my cooking here are much less salty type. We used rock sugar for cooking no rock salt. Thanks for asking and also thanks for being one of my dedicated long time subscriber .

Hi uncle Fai, I bought some pork chops (without the bone) and I want to cook them in a Chinese fashion. I realize that pork chops may not be as common as, say, pork belly or ribs. Do you have any recipes I can use?

What kind of cardamom is that?!
White cardamom typically every Asian market has it, there's also black cardamom it has a smokey earthy flavor. And there's the more common green cardamom which is pungent and sweet.
