  • This is our product review of some very popular whetstones. The Otani Toishi Kitayama 8000, Arashiyama 6000, Imanishi 1000, Imanishi 2000 Whetstones have been around for a while. The company is very large and they also operate under the name Bester. We have the opportunity to test them out and give you our feedback. We use a Kato R2/SG2 Sujihiki
    to get a feel for them. Most of them were quite muddy and had a soft feel. Join us and hear more in the video.

    If you like softer, muddy stones the Naniwa Lobster set is a pretty good value. 220/1000/3000 for $100 or less. I got mine for $102 shipped with a stone holder. The 1000 and 3000 have that nice King like clay smell. The 220 and 1000 are over an inch thick and the 3000 is around 3/4th of an inch thick. That could be a good first set review.

    The Arashiyama 6k always reminded me of the 5k Chosera. I will say that Ken Schwartz is an encyclopedia of knowledge for Japanese natural stones. I have a Tsushima and Yaginoshima Asagi for finishing

      I have the Kitayama 8k. It's one of my favorite stones, and I often finish on it. My other "can't do without" stone is the Green Brick of Joy (Aotoshi, I think). I can go from that to either Arashiyama 6k or Kitayama 8k. Harder steel is harder to sharpen, imo, and I do have a Naniwa SS 12k for > HRC 63.

    I always take a diamond plate to new stones to remove any sort of outer finish it may have. Learned the hard way on the Cerax 1k. Felt like glass until I flattened it and revealed the portion underneath. Seems most stones have a smooth glassy layer on top that needs to be removed.     You have quite a few stones Greg ;) now it's time for stone comparaison in the same grit range between the brands.. Can't wait for morihei vs suehiro vs naniwa vs king vs imanishi vs JNS.... This will be awesome.. Some ranking will be great.. I'm interested to see what is your favourite top 3 1k grit stones, lower grit stones, fine grit stones etc...

      Yeah man! That’s been the plan. I’ve been trying to buy enough to be able to do all of that. This shits been getting expensive I’ve definitely put out 20,000 so far and knives and stones.

      @@nadm You have plenty of stones and knives at this stage. You can stop buying stuff and still you'll have material to make content for another year or even longer. And 20k is not that much, it's almost the price of a regular car :) (this was a small comment to make you feel better about your wallet :)). We, as viewers , need quality content not new content. A solid well made video about a stone/knife/product stays and circulates in the knifeworld for decades. I still watch knife related videos from 10-12 years ago. When the content is quality , it stays!!!

      @@nadm regarding the Jnats, this is a world i will wait at least a few more years before I go into. I have enough to learn about Synthetic stones before I go to the Jnat world. They say you need to learn to walk before you learn how to run. I'm still doing baby steps here :) no pressure

    I really enjoyed Kitayama 8000 feel and they are so inexpensive I might have to look into the rest of the catalogue. Also don't worry about the Japanese, along with Finnish it seems to be one of the most difficult languages you could try as an English speaker. English just has that mad pronunciation rule book where the defaults are so different from latin based languages - or Japanese and Finnish so you're bound to make mistakes involuntarily.
    When you talked about the range of Imanishi/Otani Toishi or whatever the top title would be, it seems exactly how you said it is - every single store selling sharpening stones have different part of the catalogue. Like this Finnish store Hiomakivi where I buy my equipment has Arato 220 (the pink brick), WZ400 marble, Bester 1200, Arashiyama 1000, Arashiyama 6000, Kitayama 1000 and Kitayama 8000. And combo 1000/6000. But the other stores I looked up had different stones (other than those best sellers at higher grits, Arashiyama 6000 and Kitayama 8000). Although he seems to pick up mostly stones that he has tested and is happy with, not necessarily a full range of some brand if they don't sport a consistent single product line like Naniwa Professional/Super Stone or Shapton Kuromaku/Glass. So maybe not a surprise he doesn't have the full range. He does ship internationally but no clue for the prices, domestically you get free shipping for most of the products due to the price of sharpening items being relatively high.

    And that is why they don't specifically about soaking or not soaking the stone. Use it as per your convenience is the hidden word. I give my Imanishi #1000 a full night soak before I use it and it gives a superb performance. I even soak the Kitayama #800 for 10 mins before I use it and becomes a different beast altogether. Coming to Naniwa Junpaku #800 I give it a 10 min soak befor I use it.

      Thank you sir. We were hearing from a lot of people after this video. A lot of people really do Perma soak the 6000. It’s been amazing to hear how everybody’s been doing this a little differently

      @@nadm Yes. Some people even permasoak the #1000 and they have found it to perform really much better.

    I have an Imanishi 8,000 from Lee Valley Tools. It’s a quality stone that doesn’t get a ton of use at that grit

      For commercial use it probably never needs to be used. I think for people who have their personal tools that they need to keep sharp then they might want to do it out of personal satisfaction

    Greg, why did you not flatten the non-logo side as to keep the logo on the stone? I thought you normally do that.

      Yeah! I usually do but I'm kind of over that. The stone did not have a logo on it. The stone came with just some plastic covering it and it had the characters in the plastic..

    Nice video, you are very professional. I’m using Sharpton pro 120/320/1k/2k/5k/ and chosera 400/800/1k/3k/5k. And to me, the speed is the most important so I prefer sharpton. How’s the cutting speed of the 6k stone in your video compares with chosera 3k. Thanks

      It’s a pretty hard stone. I wouldn’t use the word cutting. I know exactly what you mean but it doesn’t seem to apply. I love the soft and muddy feeling of the 8K. I would definitely probably say I like the two-year using for the 5K over this one. I don’t hate it. It’s just not my favorite

      Obviously your first use it to level out your stone but then realize that the service is now a grit of 400. It is not going to first be the grit that you wanted. You would have to use it for a while to smooth it out.

      We're going to have to do a whetstone war. I don't have that combo stone. I do have their 6000 though. So I'll end up doing a head to head on video. I couldn't tell you right now.

    Kitayama is the 8000 grit stone,

      I agree with you but that's not always the case on every website. I was pointing out the fact that you're going to see all those different names wherever you go. One company uses for names on their website for this product. Even though I have come to learn that what you said is true then I was pointing out when you're on different websites you might hear these different names and you need to know that they're the same product.

    I don't think you need the progression through all stones with different grid levels. It really matters what is the first stone to start with and the quality of the last. After getting the burr on the first, the time spend on the other stones will vary, but in the end the result should not be so different.

      The goal was to review each of the individual stones. Not all stones are built the same and, like I said, I go buy a different brand names under the same corporation. Only a couple have some natural stone powder inside of it. It was definitely important to review each individual stone.

      All great points - Thank you. On that note, can I go from a 3000 Naniwa Professional to say, an 8000 or 10,000 and avoid a 5,6, or 7k. Also, I love the Naniwa stones, so far. What is the best polishing stone to go for....(I’ll have it for life, so naturally want the best . Thanks in advance. Alex.

      @@alexpearson8481 for general sharpening you don't need to go above 3000. You're going to have better results if you go through the progression. There's no reason you can't jump all the way up to there but I think you would see a difference. I do like Morihei because they are sharpening stones and polishing stones. They are made with a lot of natural material inside of them. They are made to mimic natural stones.

      That was an interesting point and I kind of think I want to agree with you now that you said that. There's something mushy-ish about it something that is just unique and that was a really good way of saying it.

    You maybe talked about this,but I see that you do edge leading strokes in your videos. Is there any reason behind it and would it effect the performance and the finish compared to edge trailing strokes ?
    PS:Something that it came in my mind right now is if you do edge leading strokes and then strop on leather (which obviously is always gonna be edge trailing) would that effect the edge by any means if that makes sense.

      So, if you ever get a chance to read the book that's published every year by knife grinders, you'll understand. There is much research shown on how much cleaner the edges if you do edge leading strokes. I have different videos on strop. The different types of steel and the reason that you're doing it. It would take too long to type it all out. I have to go to work but if I get a chance later on tonight when I get home I'll try to put some links in here for you. Definitely go back and watch the videos on stropping. That will make more sense. Edge leaving strokes are incredible for the edge up to 8K and then after that you are putting strain on an edge that's very thin. We'll talk more about it.

      I'm gonna say great, but I'm sure there are other people who are better experts than me on that particular one. I like the softness of the stone. They just have a muddy kind of a field to it. Very much like a natural stone.

    As for the #2000 stone, I do not think it a splash & go, soak it for at least 5 minutes. Stones that have at least even 30 % of natural stone powder do not make them a natural stone. Soak the #2000 for 5 mins and you'll feel the difference.

      I don’t remember what I said in the video but for some reason I thought I did soak it prior to use. I remember there were certain ones that definitely said that you had to soak them.

      I was just told by someone that they knew for a fact that it was a soaker. I wish I had known because I couldn’t see that anywhere. When I was doing the research, the websites were not telling you. My wife was right next to me when we were doing the research. I appreciate the heads up. Thanks for watching

    I never tried the 1k or 2k but i wll say i did not like the 6k or the 8k at all. Especially the 8k i feel is the most overrated polishing stone one the market. Naniwa 8k snow white as well as Naniwa Fuji 8k absolutely make that stone obsolete

    This is pretty awesome.
    The Kitayama 8000 I ordered two days ago, was delivered while I was watching this video,and I unboxed it right after watching.
    Can't wait to see how this performs. But the knife I will be using it on first, I won't finish fitting and finishing it for a few more days.
    Mine came with the wood base, Is there any reason I should not remove the stone from the wood base? As I prefer to use the stoned directly on the sink bridge.

    Did not like those stones, flattening them out of the box takes a lot of work and my edges were still not flat.
