I’ve been VEGAN since I was 15 years old and I have recently turned 51, but I was hit by a Taxi about 12 years ago and am currently working on walking by myself. I use a walker now, but as I am aging, it is high time for me to be walking unassisted. I TRULY APPRECIATE YOUR CHANNEL! Thank you for making me smile and feel connected. I am 72 and am really grateful to you both for taking us on the controlled calories, high protein journey. I'll be honest and tell you a few of your recipes are not quite my cup of tea. I'm in a single household in Sydney (not Canada, not the the US, but Australia). Although I like Mexican food, I'm not a big fan of having it all the time. I had a Mexican cousin-in-law who taught me some wonderful recipes, but sadly she passed away a couple of years ago and I so miss her beautiful, gentle soul. For example, I suspect the gazillion chili recipes I encounter on US channels is very much a culturally specific dish to Americans. We also have a seasonal flip, with us nearing the end of summer before going into autumn and winter. So I often ferret around in the recipe search bar and often find myself on little journeys. So, many thanks for your free resource for us to dig around in. We vegans are pretty lucky to have so many resources open to us online. I wouldn't include vegan meat anywhere just for the protein. To me, it's processed food and it's also trying to mimic meat. I really, really dislike meat. I've been vegetarian since I was 12 when we went past hundreds of cows about to be slaughtered on a Sunday drive. They looked sooo sad. They knew. After crying for a few hours I declared I'd become a vegetarian. I didnt know about veganism or WFPB. I don't think it existed back in the day. Tofu and tempeh is as processed as I get, and I often make my own. It's great because they're fermented.
I just thought I'd mention my perspective and appreciation. I'm certainly not asking you to change anything. Good cooks should develop the switch things up and around trick to make good food, and you tell us to do that all the time. Again, many thanks, I get lots of ideas here. The number of podcasts with vanguard researchers telling us about the loss of muscle being one of the big problems in old age is in the multitudes. Plus the Sherzais on dementia, sleep, exercise and diet and we oldies (not including you two) have a helluva lot of work to do!
That macaroni salad looks delicious. I cannot wait to make it. I think I might make some tempeh bacon for mine instead of the sausage. 😊
Oh! How do you make your tempeh bacon please? New to using tempeh.
@@christine1962ful I just make a marinade of soy, maple syrup, liquid smoke and whatever else I may feel like at that time 😄 I don't measure, just taste as I go. Slice or crumble your tempeh, depending on how you want to use it. I like to marinate for 1-2 days then you can air fry or pan sear.
I also buy mine from Whole Foods but your way will definitely be cheaper😂

For Hawaiin Pasta Salad recipes, I've seen how they save a 1/2 c of dressing for right before serving. You might try this.

I am also transitioning to a high protein low fat vegan diet in order to lose my last 10 pds and gain muscle. One of my favorite Ninja Creami recipes. for 4 servings. 3-4 very ripe bananas, mashed, 2 tablespoons of Maple Syrup or sweetener of choice, 1/2 cup of Soy Milk, 2 scoops of EarthChimp Chocolate Protein Powder, 1 Tablespoon PB2fit. Freeze - Blend light ice cream. This is so delicious. Hope you can try this and let me know what you think. Appreciate you sharing your journey -helping me a lot.
I will try this for sure, but might use garbanzo beans or white beans in place of the vegan sausage. Thanks for all the details!

My banana ice cream recipe.
One frozen large banana
1/4 cup or less oat milk
1 tablespoon natural nut butter
Tsp vanilla extract
Use high spend blender until smooth
Ready to eat.

When my kids were little, I used to do a chocolate fondue on Valentine's Day:
9 oz. vegan chocolate chips
1/3 cup soy creamer
2 T Kirsch brandy or Cointreau or Triple Sec (or for kids, freshly squeezed orange juice)
a little vanilla
Combine all the ingredients in a small microwavable dish.
Microwave 30 seconds at a time until chocolate mostly melted.
Stir to combine.
Chocolate Fondue Dippers: I put these on a Lazy Susan.
• Banana slices
• Whole strawberries
• Shortbread or other cookies
• Nuts: pecans, walnuts, …
• Pretzels
• Pineapple
• Apricots
• Apple slices
• Pound cake
• Marshmallows
• Rice Krispy treats
• Raspberries
• Brownies
• Biscotti
Chocolate Fondue Finishers (after dipping in the chocolate fondue, dip in these):
• Mini chocolate chips
• Sprinkles
• Non-pareils (little round ball sprinkles)
• Shredded toasted coconut - toasted in a skillet on the stove or on a tray in the oven or in the microwave
• Chopped toasted nuts (walnuts or almonds)
• Toffee pieces
(We call leftovers “Déjà Vu Fondue”! :-) )

This looks delicious! I love those sausages. I use them for breakfast with vegetables and a little potato as a breakfast *hash*.
I'm thinking some chickpeas would also work well in that salad.

Love these! I always use bananas in my Ninja Cremi. Never thought to use the pudding powder, what a great idea for a lower calorie treat. And those Field Roast sausages are sooo good! Thanks !
My favourite creami icecream is to mix one can of crushed pineapple in juice, one packet of the MoriNu silken tofu, and lemon juice to make it nice and tangy (or some citric acid if you don't have lemons). I use an immersion blender to blitz the mix before freezing. I may try making it even higher protein by adding a whole serving of unflavoured protein powder to it next time (which means that I'd add even more lemon juice or citric acid). The mix makes more than one creami container full. I havent done the macros properly, but I'm more than happy to have just non-starchy vege stir-fry followed by a whole container of icecream as my dinner sometimes.

PS - it's summer here in New Zealand so you can bet that there is plenty of WFPB icecream being devoured in my house while losing weight.

I am doing weight training 3 days a week and really thats it. I still walk almost every night but that doesn't really give me much of a burn. Its the weight training that is making a difference

One is a really fun chocolate peanut butter pancakes, one is a chocolate peanut butter oats, One is a breakfast scramble with just egg and some vegan sausage and there are a few others like high protein tofu scramble. Check them out. I am also open to ideas since I am just starting down this path and having to create new low calorie, high protein recipes.

I've been putting my meals into the Cronometer every day and it has really helped me become aware of the macros and the calories (while I'm not striving for very high protein - I've been making an effort to go a bit higher, to get a better balanced daily intake). Salad looks good - only need a bit of warm weather to go with it. I think Joey has a good excuse to go clothes shopping.... Sending hugs.

Hey guys I love your channel and your recipes. I make my own soy milk in the arcmira nut machine. I always have the leftover soy pulp which is called okara. Do you have any recipes that can turn that into ricotta for lasagna? This milk machine is the only fancy machine I have. That' macaroni salad looks fantastic. In the summer, we are working outside all day long and to be blunt, the idea of going home, showering and changing and THEN having to come up with something for dinner is horrific and we end up eating out and not the best. This looks like just the thing - get it all put together, throw it in the fridge and forget about it until we get back and then, voila! Dinner is served. Thanks so much!!
The macaroni salad looks amazing! My husband and I are low salt due to high blood pressure, even though we are both WFPB and thin? So I could maybe add one sausage. I bought the TVP, but haven’t tried it yet. I was going to make hot tomato sauce and pasta today, maybe if I used part TVP and a little sausage too it would be good.
I think you could use TVP instead of the sausage and season the TVP with sausage-like herbs and spices, then I would water sauté the TVP with a very small amount of water after soaking and draining it. I have been using more TVP lately for increased protein and I am low salt, no oil too.

What was the texture of the Ice-cream using the xanthan gum?
It was prefect. I used less than a gram so it was very little. But to be honest, I didn't notice a difference between using it this time and not using it. So, I don't know that I will use it again. The texture was right on with or without it.

this recipe makes six servings so weigh it, divide by six and then portion it out. That is how we do each of our whole recipes.
