    Are lupini as bitter and briny as I remember them from my childhood? If yes, does this counteract the strong flavour of the vital wheat gluten?

      Lupini beans can be quite bitter and briny if they're not prepared correctly. The bitterness comes from alkaloids in the beans, which can be reduced through soaking, boiling, and rinsing over several days. So, your childhood memory of their flavor could very well be accurate if they weren't processed to remove those qualities.
      I recommend buying the Brami brand on Amazon which have already been processed to remove the bitterness commonly associated with raw lupini beans. Their aim is to offer a product that is more palatable to a wider audience, so they are not as bitter or briny as the traditional, untreated lupini beans you might remember from childhood. They are flavored, however. So pick your favorite for this recipe.
      As for pairing them with vital wheat gluten to make lupini seitan, the strong flavors counterbalance each other. This seitan has a very pronounced, "wheaty" and somewhat umami flavor when these two ingredients are combined.
