  • In todays cook with me episode, you will learn how to make delicious vegan BBQ nuggets. You will be surprised how easy this seitan recipe is.

    **BBQ NUGGETS LUPINI SEITAN RECIPE**
    Makes 4 servings
    MACROS per serving:
    31g protein/11g carbs/1g fat
    INGREDIENTS:
    - 150g pickled Lupini beans (I used a bag of Brami Snacks)
    - 6 ounces of water
    - 120g vital wheat gluten
    - 20g nutritional yeast
    - 1/2 tablespoon BBQ seasoning
    INSTRUCTIONS:
    1. Preheat the oven to 350°F, line a baking dish with aluminum foil, and lightly spray it with non-stick spray.
    2. In a blender, add the lupini beans, and water. Blend until you get a smooth batter consistency.
    3. In a large mixing bowl, add the vital wheat gluten, nutritional yeast, and seasoning.
    4. Fold in the wet ingredients with a spatula. Once you have folded in all of the wet ingredients, knead the mixture with your hands.
    5. Using your hands, tear the dough as shown in the video and place the nuggets on the aluminum foil lined baking dish.
    6. Cover the baking dish with aluminum foil and bake 20 minutes covered.
    7. After 20 minutes, remove the cover and bake an additional 20 minutes.
    8. Cover with your favorite BBQ sauce. Serve, and enjoy

    I LOVE your lupini bean seitan, my husband's a pilot (and Marine) and on his long trips he'll frequently have trouble finding ANY high protein vegan entrees. He packs a bag of these in his lunch cooler, and will pop one onto whatever vegan sides he can get in the airports. Truly a lifesaver, girl! Can't wait to try these.

    Omg! This is the best Seitan anything I ever had and super quick and easy! I think have nutritional yeast though, I added half packet of taco mix... I did put it half the time in the air fryer. I could eat them everyday!!

    OMG! I have tears 😭 of joy! I just made this and it’s Vegan Chicken!! Thank you Jesus! 🙌 I used 1/2 tbsp Trader Joe’s all purpose seasoning, 1/2 tbsp of McCormicks Steak Seasoning and the Yellow pack Italian Marinated w/ Garlic and Rosemary Brami Lupini beans. This is the perfect combo. Look forward to trying the original recipe as well.

    I just made these s apart of the "basic" meal prep you put out. Was a bit concerned, as I used cannellini beans, and when I blended them up, there was no "hummus", just liquid. However, it all firmed up, and yum!!! Can't wait until the week to have the full meal!

    I got the lupini beans and made these tonight. I didn’t use BBQ seasoning but used Bell’s seasoning and a vegan chicken seasoning instead. I made nuggets but also made a small log that a steamed first and then popped in the oven with the nuggets. Amazing! Thank you for the recipe.

    I've made this twice now and both times they were soooo easy and came out delicious, even though I really didn't use the right ratio of beans. The first batch, I used 1 can of navy beans, drained and rinsed. The 6 oz water was too much (definitely not hummus-like! lol) so I thought the batch might be ruined but they turned out great. I then made a double batch, using 2 cans of rinsed and drained garbanzo beans and air fried in our Breville for 15 minutes each side. My guys couldn't get enough of them! You mentioned that one of your favorite ways to eat them is to air fry... do you do this after they're already baked? Thanks so much for the inspiration!

    Hi, thank you for the recipe! Much appreciated. I cooked the nuggets on my oven which happens to be a convection oven & they turned out a little dry…not sure of its bc of the oven or bc of its normally like that. Just wanted to ask if you eat these plain or as part of a meal. Any suggestions on how to help with the the dryness? Thanks!!!!

    I make your lupini bean seitan so much that I do buy dry beans in bulk from amazon. I have 4 pounds of pickled beans in my fridge. I made 4 batches earlier today. I'm getting low on poultry seasoning so I plan to make this variation this week as well. I've been on a taco kick lately using lettuce cups. This version would work well with that. Thanks!

    I noticed there are different flavors of the Lupini- garlic rosemary, chili and lime, hot pepper sea salt and vinegar.. do you always use the blue sea salt bag for this?! Thank you Natalie ❤️

      @@kamerontetreault8339 In my experience they do! The best is going to be in the airfryer but my hubby and I have to microwave them often and no worries- just bring extra buffalo sauce/etc. if you had previously tossed in a sauce.

    Dried lupini beans are like normal beans. They can be soaked overnight and cooked the next days. They are soft after 10-15 min.! I'm going to try your recipe, thanks!

      Only sweet lupini beans are safe to eat after only a few hours of soaking. The regular lupini beans are highly toxic and need to be soaked and rinsed for weeks/months.

    Thanks for posting the recipe! Just a small correction: according to the photo of the nutrition facts label shown on the Amazon link you posted, the Brami lupini beans only have 4g protein per serving. Maybe because it’s only snack size? The Amazon listing incorrectly lists it as 7g, but the actual nutrition facts label shown on the Amazon page shows 4g.
    PS do you use the Sea Salt & Vinegar flavor for this recipe?

      It's because Amazon changed it's serving size on the package. A smaller serving size equals less protein. They have exactly the same amount of protein as the older version. It's the exact same, except Amazon just changed the wording on the package.

    I am trying to make a sweeter version by using silken tofu instead of beans, a little vanilla, some coco powder, powdered coconut milk and dates. I bet you could perfect a sweet seitan recipe!

    Hi! I’m making this now and realize you have one package of the lupini beans but it says 150g of the beans which would be a lot more. Each bag has 65g - is it one bag or multiple bags? The lupini beans are a bit expensive

    Looks like there was a good amount of flour left in the bowl? Is that just trashed? And would that change the macros?

      Shannon T From the camera angle it looks like there is, but I picked it all up with the dough. There was just a little bit stuck to the bowl. You’re going to see that vital wheat gluten as extremely sticky when you add water.

    Hi Natalie, I really want to make this recipe but I don’t know how to convert grams to cups. I looked it up and it says 120 grams is 1/2 cup. However it looks like you are putting a lot more than a 1/2 cup. Please help I have all the ingredients. Thank you!

    No steaming the seitan before baking? That's what I have seen in othere recipes... Are they not dry w/o adding sauce?

    If we use white beans for example, how much do we use? 150g just like the lupini beans?

      I think more. I’m using canned cannellini and the bean/water ratio is really watery. Put the whole can of beans and still watery. Doh! Next time I’ll try 3oz water and go from there.

      I had the same problem with cannellini. Very watery. I'm in nz so we don't use oz to measure water.... so I was worried I had converted wrong.....

      @@kalliebailey550 it’s just the consistency of white beans are different than lupine . For me it was too much liquid and next time I will use less water with the beans

    is there a substitute for the wheat gluten for people who are gluten sensitive? (ie Xanthum gum)

      The gluten is the bulk of the “meat” that is full of protein. Xanthan gum is normally used as a binder. One is not exchangeable for the other in making a “ meat” alternative.

      Try using either tofu cut into nuggets, or cauliflower.
