I love sikhye! :D All the Korean restaurants here serve it to us for dessert if we order the all you can eat bbq xD haha but I'm pretty sure most of them aren't homemade. I have an old rice cooker so it doesn't have a timer =/ But I'm sure you can cook it on the stove for 3 hours on low heat?

I'll have to store about half of the barley water in the fridge and then add it back into the pot when it's time to cook. Is that okay, or will it taste different if I do that?

what's the name of this machine you are using?!!! steam machine? can i use it in normal cuizine? looks very nice recipe...thought it's hard to find malted barley flour in greece athens.
it's a rice cooker. You don't have to buy one. Just cook the rice in a regular pot. 10 minutes on low-medium, stir/fluff the rice and then 10 minutes on low. To ferment the rice, keep the rice and barley mixture between 50 and 70 degrees Celcius (120-160 F). Do it on a double boiler (not direct heat). Do not boil, the fermenting process will stop and not work. Fermenting process will not happen if the temperature is not at least 50 C. Some other people actually wrapped the pot in a electric blanket for the fermenting step.

You can use brown sugar also..... but for color and taste.. white sugar is better .. especially the color.. ^^
