    I remember my aunt made this one winter when I was visiting Korea many many many years ago when I was a little kid. She'd carry me on her back while I hold on to a ladle and a bowl, and we'd go out to the garden together to scoop some Sik Hye from a container she had stored outside to keep cold. It was really good!

    if you have Korean or Asian store.. you can buy them easily.. if you don't have.. maybe online stores ... amazon will start to sell korean ingredients soon.. they are preparing now..

    You mean... you don't pour all to your rice cooker..and add the leftover barley water later to the pan with the majority of the barley water ?? if that's your question.. it's because your rice cooker can't have all in it.. if it's big enough.. you can just add all to your rice cooker and keep it warm for about 3 hours.. if it's not what you are asking.. ask me again.. ^^

    I have been looking for this recipe for a long time. This drink is always served at my local korean restaurant as a dessert drink. It tastes so delicious but I never knew what it was. I will try your recipe and looking forward to enjoy this drink at home.

    You can use brown sugar also..... but for color and taste.. white sugar is better .. especially the color.. ^^

    It can be after dinner as a dessert... or when somebody visit between meal.. and you serve just snack.. or fruit..this drink is good to serve with other simple food not meal.. ^^

    I go to a Korean spa near my house. I always get sikhae with dinner. They say it is for holidays but they have it everyday! But I guess a spa day is a holiday (^_^)

    yes.. many people add some slice of ginger when they boil the drink.. I prefer it without ginger.. so I skipped it. ^^

    Oh.. you can't cook on the stove.. even it's low heat.. it is too hot... it is not cooking.. it is more like...fermenting.. so you will need rice cooker keep warm function for this.. sorry..

    Aeri, there's a cinnamon like drink that I had when I visited Korea. But not sure what's the name. They said it's a traditional drink. Do u have any idea what it is? Hope to get the recipe. Thanks

    I love sikhye! :D All the Korean restaurants here serve it to us for dessert if we order the all you can eat bbq xD haha but I'm pretty sure most of them aren't homemade. I have an old rice cooker so it doesn't have a timer =/
    But I'm sure you can cook it on the stove for 3 hours on low heat?

    I know you shared this video a long time ago, but I only just found it and I'm making this soon! However, I do have a question. My rice cooker is small and only makes up to 6 cups of cooked rice. I'll have to store about half of the barley water in the fridge and then add it back into the pot when it's time to cook. Is that okay, or will it taste different if I do that?

      Yes, you can do that.. but also you can just cut the recipe in half and make smaller amount..

    what's the name of this machine you are using?!!!

    looks very nice recipe...thought it's hard to find malted barley flour in greece athens.

      it's a rice cooker. You don't have to buy one. Just cook the rice in a regular pot.
      10 minutes on low-medium, stir/fluff the rice and then 10 minutes on low. To ferment the rice, keep the rice and barley mixture between 50 and 70 degrees Celcius (120-160 F). Do it on a double boiler (not direct heat). Do not boil, the fermenting process will stop and not work. Fermenting process will not happen if the temperature is not at least 50 C.
      Some other people actually wrapped the pot in a electric blanket for the fermenting step.
