have you used luster dust? and if so do you have one you can recommend for sugar cookies. I'm nervous about it because I'm reading that they may be non toxic but they are not considered edible... However, I think you are amazing at what you do and your work is just beautiful!
Would it be possible to handle the chocolate if wearing thin neoprene gloves to avoid fingerprints? I know the handling would still need to be brief to avoid melting the chocolate. Also, does mousse discolor or mar the chocolate in any way? I'm considering a project that would involve material both inside and outside of the cup, and I don't want the chocolate to look awful once the outer material is removed. Thanks, as always!
OK, here's the design idea (get ready for the ramblings of a crazy person): I make cakes to celebrate any time one of my labmates defends their dissertation and earns their PhD. I always make something that represents their research. For example, back in April I made the cake decorated with two layers of chocolate lacework in the shape of a hexagonal grid to represent the multiwalled carbon nanotubes that the guest of honor used in his research (which came out very well, and I thank you very much for your advice on that one!). This time around I intend to make a cake that has a hollow chamber inside it held up with cylindrical posts made of cake. That's the easy part, I've done it before. The complication is that this time I want to line the chamber and posts with solid chocolate, much like the molded shapes and wraps that you assemble into complex shapes. I think I've mostly got that figured out. However, I also want to fill the chamber with something. I had been thinking of mousse, but now I'm worried that it will ruin the chocolate. Told you I was crazy.

Hi Julia I tried this with both dark and white chocolate. Dark chocolate looks amazing. White chocolate does too but I would like to colour it as I don’t like the yellow tint. Was wondering if you know how to colour white chocolate to keep the shine??
