How to Make Chocolate Lace Dessert Cups

  • A variation of my popular chocolate lace doily and cake wrap videos, this episode of Recipes for a Sweet Life reveals how to make freestanding chocolate dessert cylinders with two types of chocolate! I show a simple swirl pattern here, but you can change up the design to fit your theme . . . come to think of it, a lattice pattern would turn this cylinder into a mighty tasty Easter basket!

    NOTES ON CHOCOLATE:
    You could use most any chocolate for this project, even candy melts, though I prefer to use a premium couverture chocolate because its relatively high cocoa butter content gives it great flow-ability and mouth-feel. Brands I most often use are Callebaut, Valrhona, and Guittard. I avoid the usual store-bought brands like Nestle and Hershey's, as they don't flow as well and are more waxy due to non-cocoa butter fat substitutes. They also set a lot faster, which may make it harder to pipe the entire lace piece before it hardens. You have the option of tempering the chocolate (or not) for this project. If you do not temper the chocolate, the cylinders are best eaten soon after removing them from the fridge and filling them, as untempered chocolate is more prone to wilting at room temperature.

    I wonder if it is possible to do this for small no bake cheesecakes? And would excluding the white chocolate be a problem(ie. difficult to work with when removing the parchment paper)?

    Just incredible! I LOVE the look. The bottom reminds me of chocolate stained glass. Thanks for these great videos! As others have mentioned, it is clear that you are a natural educator - I really appreciate that approach because I like to know the "whys" and the "hows" of cooking, baking, and confectionary. You go into the perfect amount of detail - not assuming everyone is a chef - but also not assuming your viewers know little or nothing of the subject. Thanks again for sharing - it's late here, but I am just having trouble stopping the video-watching :)

    Just wanted to say how much I love your work. I teach cooking classes in Boston, but don't do pastry and I am always on the look out for good pastry resources to refer my students to. Unfortunately, many youtube videos are not detailed enough and focus more on finger licking and moaning over desserts than demonstrating a technique in detail and explaining somewhat tricky concepts to make them accessible to home cooks.       Helen Rennie Never mind -- just read your bio and saw that you are in St. Louis. Also saw that you have degrees in Mechanical Engineering and an MBA! I studied computer science in college and worked as a usability engineer before switching to the culinary field. I love technical people who end up in the culinary field. They are usually very detailed and process oriented. To me writing a recipe is like writing a spec. If you want something good to come out of it, you have to be thorough. I agree that it's not always the most popular approach ;)

    GREAT video- Love the finished product! Will share this with my followers. Personally I would highly recommend using TEMPERED chocolate- untempered is a little uncertain and unstable. Something this beautiful should be able to be used and enjoyed without worry of melting, falling apart or "drooping" while sitting on the table.     Im just starting off and learning along the way. I came across your video trying to learn on what chocolates i need to make what your making(dont know that right name for it )and decorating for cakes etc. I have a year to try to master it or at least try. The reason is im surprising my parents with a party for their 25 anniversary but im making the cake. But im also stuck and dont want to ask for help because its a surprise for everyone.

    Your welcome! I used the correct chocolate, and everything, but when I finished, I tried to remove it from the bottle, and it broke. Luckily I made a few more, and they turned out great. I think the problem was I might have kept in the fridge for a little too short, when I tested the first one. But now, everything is going fine. Thank you!
