Panko are breadcrumbs but they aren’t just dried bread crumbled up. It has a secret process. So I think it qualifies as a gourmet ingredient, not a convenient homemade replacement.

I’m vegetarian and I replaced the chicken with extra firm tofu and it turned out A M A Z I N G!!! I didn’t pound it or anything, but with a paper towel I dried it out a lil. I seriously recommend this

Ugh, waiting for my ride after work and the tilapia I had for lunch has worn off. This looks amazing and I daresay would make a great, quick lunch and dinner for my brother and I, who are roomies. I say I hate cooking and try my hardest to not fall into traditional female roles for a fear of getting stuck there but our schedules currently work out that I'm the one doing most of the cooking. And I enjoy watching cooking videos so...I get inspired.

to evenly brown the 2nd side: just add another 2tbsp of olive oil when turning the cutlet. Panko + oil(or butter) + heat = browning

actually he wouldn't be fat.. the chicken and tuna are both excellent sources of proteins, the mayo could be made with olive or avocado oil and if the rice is long grain and brown it's a slightly more complex carb than bleached rice. don't assume. good luck on your gains bro

Carla, I'm thrilled to see someone (esp a woman) putting a "normal" amount of mayonnaise on the bread and covering the whole slice! I really don't like getting a sandwich with a transparent smear of mayo that doesn't even cover the edges.
