We are not fully on keto - we are in optimal health we just wanted to try this keto version of lasagna without the noodles. Now if you are on 100% keto then you should be extra observant of the carb intake- but since we are not….. we can afford it.

It is cheese with cheese.... it is double cheese. I would change the title if I were you to something like, for instance: Excellent lasagna replacing pasta sheets with cheese. It will definitely help your viewers to either watch it out of interest and taste, or to just say: It might great but it is not for me. It is all about meeting people's expectations. I was looking for a new ingredient that would replace my pasta sheets. But not an agreedient that every good Italian family already use in their lasagna. On the other hand, I am sure your "lasagna" would be tasty. My comment is only to help you reach your people better. Keep up with your good job.
High LDL cholesterol is only bad for you if it has undergone glycation and oxidation in the body. Cholesterol by itself is not bad for you on a ketogenic diet, since you don't consume enough carbohydrates to initiate glycation of cholesterol.
For Keto though, should grate fresh cheese. Those have cellulose and potato starch
