    We have a bakery in San Francisco that only makes five or six different focaccia and that’s all they sell and it’s great. Family owned. Family owned and operated since 1911. Thanks for showing us how to make it.

    It just occurred to me to check something. I was always familiar with name "focaccia", and only now I checked that we also have something similar, it's called "pogača". In fact, that word was taken from Latin (focacius, like focaccia) back in the Middle Ages and changed a little over time, so that even here in the surrounding countries it is called "pogača" (that "č" is read as "ch" in English or as "cc" in focaccia), with minor differences. Otherwise, the bread is similar to focaccia, except that it is mostly round and not filled with anything, but only dough. By the way, there is also a corn flour version called "proja". And it is usually served for Christmas, Easter, Slava, but it can also be served on any other day, like ordinary bread.

    My grandpa used to whip up a quick pizza from scratch. It was so fast that I don't even think he could have used yeast. He was from Napoli and the pizza was very thin and so delicious. I have searched for a process/recipe but cannot find anything. 🙁 PS This focaccia looks amazing!!!

    Thanks Anthony - you really do make the best tasting cheese I've ever had, and I've travelled a lot in Italy. This looks good even for someone as lazy as me. I reckon a couple of pieces that size would be a good lunch with the right topping. Bread freezes well too.,,

    Very good recipe, but before the baking sheet raising I like to fold it like roman pizza, and in that step even extra could be done. Like I tried to put pesto in it and folded the dough to hide the pesto inside and that even gave extra layers and great tastes. I didn't tried with grapes yet, but since we have some in the garden I will try for sure, thanks for the great idea.

      @@vincenzosplate Yes I think for regular focaccia I have great method with poolish and long fermentation. But I could use your help with Genovese style focaccia! I've tried 1-2 recipes but always chewy, nothing extra. I not achieved the thin and fluffy soft texture as the original is.

      If you see the product color to quickly you can put a piece of baking paper on top so that the sugar will not caramelize that fast!

    Vincenzo, i know it sounds strange at first, but i highly suggest to give apple on pizza a try, just apple of course, no sauce, put them tight like a cake but really flat cut, put some cinnamon/sugar mixture on top.
    We always do this after we had proper pizza and have some dough left.

    Top is too charred, inside is fine, bottom ok.
    You need to add more EVOO or my version Red Palm oil with little bit water to prevent charring.

    I can't buy stracciatella here. I guess I could scrape it out of the burrata, but that seems evil. I suppose one could cup burrata and spread it across the focaccia. Looks awesome! I have made focaccia before with tomatoes and olives, but not a no knead version like this.

    I think I would use that for a sandwich. Maybe remove the grapes. Slice it in half and add on some nice ham possibly some egg. As I can imagine the focaccia bread would make great pillowy breakfast sandwiches

    I wish you'd specify what kind of focaccia is it, because with the dough this thick it is nothing like focaccia Genovese from Liguria, the region most proud of its focaccias. It's kinda like making a video of baking a roman pizza and calling it "an ultimate pizza recipe".

    Love the dough, but not a fan of the grape but that's personal choice. To me, a Focaccia is a savory dough alone. Marinara...rosemary and olives...tomatoes and rosemary...absolutely, but no sugar and grapes for me.

      @@Airmed91 I make it all the time. You can use sliced san marzano tomatoes, plum tomatoes or cherry tomatoes sliced in half. The type of tomato changes the flavor a bit but I love cherry tomatoes because of their natural tartness. Rosemary is the favorite, but I've also used basil and/or oregano as my herbs. Lastly, a sprinkling of parmesan or pecorino romano bring the flavor to another level. Right now, I'm making a focaccia with marinara and pecorino just because this video gave me a craving. I grow san marzanos in my garden and make a crazy good marinara, tho I personalize it a bit. Salt, basil, oregano, and garlic scapes that are finely diced, that I also grow, go into it. Vincenzo probably wouldn't approve of my 'custom' recipe, but that's just how I like it. Anyway, give it a go. You won't regret it.

      Same. To me focaccia is a savoury bread, grapes and sugar or anything sweet in general just isn't right for me. Something like cherry tomatoes, mozarella or olives would be more appropriate.

    430 grams of water? Or 430 Millilitres? (which I'm assuming is the correct measure needed) You may or not be aware that one gram of water by weight equals 1 millilitre, but liquid measurements should be displayed as such, rather than by weight. The same applies to his use of ounces for the water measurement. It is correctly termed Fluid Ounces or Fl oz. (And the conversion to Fl oz is actually 15.2 to equal close to 430 Ml.) Not trying to be picky, but accuracy counts right?

      I do not think you are aware, but 1 gram of water = 1 ml of water. Water density is 1 kg/liter. So 430 grams of water will be equal to 430 ml.

    No no no!...do not sprinkle the sugar straight from the saucer! Use your fingers to distribute evenly. You will have more controls of the amount which is importing because otherwise the product will burn. ...and it did! Bad real bad.
