There are many different styles of Focaccia in Italy. In this video, I'll show you how to make one of my favorites: the Roman "double disc" focaccia sandwich. Usually, you find this kind of Focaccia in Roman Pizzerias, as a starter, with some ham on top, or simply with rosemary and olive oil.
It's light, crunchy, and perfect to start a dinner with friends. Let's bake it together:
Ingredients:
550g High Protein Flour
430 g Water
1.5 g Dry Yeast
14 g Salt
5 g Rosemary

Thank you for not adding unnecesary commentary that a lot of other irritating chefs do.Your video was perfect, the right content with the right instructions.
His food always looks delicious. He definitely knows what he’s doing on the screen and the kitchen.
Looks great. I would not judge you if you had a glass of vino with that sandwich at 10am. Wine is food too. People forget that.
That’s truth to be told right there! Thanks
I love watching your videos because firstly, I adore the topic of Neapolitan pizza, and I make it myself, and secondly, the way you edit your videos is incredibly soothing and pleasing to the eyes and soul
This looks like the Ultimate taste. So crunchy, so crispy.
Wow! I have been making focaccia for years, but you have shown me some new methods that I can't wait to try. Thank you.
That looks amazing and mouthwatering 😍
love your videos & recipes! great work! ❤
Thank you so much!
Bruh, very nice man. Impressive. Well done.
Your cooking skills are amazing. I aspire to be as good in the kitchen as you!
So far every video I watched of yours has an ingredient combination, or a technique, that I would have never of thought of using. This time it was the fresh lemon zest. WELL DONE!
Thank you!
So satisfying 😘
Looks incredibly delicious! Can't wait to try this. Video is beautiful too. There is not another you tube video channel that can make my mouth water just from watching it. I want to be at your house every day you bake!!! ❤❤❤
You’re welcome to drop by anytime 😀
I love focaccia, but I love this idea of separating it. It looks like it cooks better, and you dont have to slice it in half. Thanks! You are such a pro.
Thank you so much!
Hey mate, I just discovered your channel a few days ago, and it is one of the best around.
Your videos and recipes are some of the best l have seen.
Good luck in the future, you deserve many more subscribers.
I judge that a fine way to live. Thanks for the beautiful recipes.
Thanks for watching!
Amazing work
Thank you! Cheers!
To be honest I’m never convinced when I read no knead but that looks convincingly good.
As always presentation with that opening shot is on point as always - love it ❤
You should try a no knead dough, i feel like it's a different vibe but still awesome texture
🫶your content and style. Could watch it all day long! You slay it brotha👍
What cheese would you sub for what you use? Not readily available to me.

The audio on the video made it SOOTHING and added a great touch to the INGREDIENTS/UTENSILS sounding off as you used them in the VIDEO!
The finish producer? LOOKSD Absolutely PHENOMENAL ❤❤❤
We just had your Detroit style pizza for dinner. We ❤ it and already made it several times. I am addicted 🤩 I think I will have to try all your recipes. Next one will be this focaccia 🎉 thank you for your amazing work. 😊

True dat!
Te encontré por casualidad!! Y ahora no me iré de tu lado!! Gracias por tus recetas ❤
Thank you so much Claudia ❤️
The one thing I don't see in the list of equipment is the bowl you use for mixing. Been trying to find one. Love your videos and how you use the captions.
Gonna have to make this one day
Yesss!
hey boss...if i prefer using sourdough starter, what amendments would i make to the ingredients? process? also, where is the salt garnish? love your work and how you share...
More videos! Lots more!
Bravissimo.
This looks so good! What cheese would you recommend instead of stracchino? Fior di latte? Mozzarella di buffalo?
And if I use instant yeast how much grams will I need?
That's beautiful 👍
Thank you!
La "baciata". Che mega forno che hai! Video bello e buono.
Grazie!
Well done again my friend!
Thanks!
That looks really good. I got a question though, isn't that amount of yeast kinda low given the total amount of flour? Is this how focaccia is usually made?
Can this be done in an ooni? Koda 12 to be exact. Or should I bake it in my home oven?
Thank you!
i luv your videos
Thank you so much!
Mmmm, ❤your recipe ❣️
Could you recommend a gluten free version? Thanks
so after they cold ferment - do you bring them back to room temp before stretch them? I assume so but there is no indication in the vid.
Hi ! :D After 24hours in the fridge, do you give some time in room temperature or not? ;>
About half hour just to bring it back to a normal temp! Hope this helps :)
Wow
gonna try that its like mortazza
Nice!
what's next?...suggestions: "padellino gourmet" and then "parigina" and you nailed them all!
Am hungry now, thank you :-)
Any time! 😎
What type of ham do you use?
I like your movie!
I have question.Do you always get back room temp the dough flom fridge?
Just half hour before stretching usually 👌🏼
Thanks you so much!
I made Pizzas etc of your recipes!
It's difficult to imitate…because I use Japanese flour.But I usually fun making!
I hope I can try to eat your cooking!
Now, why can't this be widely available? I thought this was called a pizza baciata. Though if ordering a focaccia, I'd expect something like your wonderful 1000-hole focaccia. There are undoubtedly many wonderful varieties.
From where did you source the stracchino cheese? It has me drooling!
A close by Italian deli, but you can find it easily online 😄
@@MileZeroKitchen Trust me when I tell you despite the fact I live in a large city, the closest I can find is my cheese making suppliers recipe! Looks like I'll be making my own. That's ok....when I couldn't source guanciale I bought some gorgeous Berkshire pork cheeks and cured my own. Fun stuff!
@@nancybyrd2221 that sounds incredible!
@@MileZeroKitchen Thank you! Your YT vids are awesome and inspiring! All the breads consumed in my home come from my own hands so the more you post the farther you stretch my skill set! If you haven't already tried Pan de Cristal.... you would absolutely rock that recipe!
What other options an be used to replace stracchino?
Where have you bought your precision weight? What is the brand?
It’s linked in description, thanks!

Allora...
@@MileZeroKitchen allora non ricordavo male 😂.
I'm a simple man. I see a new video. I press like.
That’s nice! Thank you
Bill O'Reilly, is that you?
This guy understands how life works =)
On a side note, shouldn't Italian focaccia be more hydrated? Just asking, not sure myself.
This is 80% hydrated, the price for a crispy focaccia I guess!
A presto!
@@MileZeroKitchen merci beaucoup 😋
😀❤️
Hot in philipinnes whats a ovennthat reaches temp you can make breads and pizza pls?
Any conventional oven works just fine for bread and pan pizza. Neapolitan is another story and you need something more powerful like an Ooni oven. My equipment is listed in the description. Ciao!
How did the weight reduce to 430 ? U added 275 and 275 flour , 430 gm of water ?
I’m soooo confused
My god… I have some of that cheese, too.
Estoy Mojado😂
Não vai ficar amarga a massa.
Please don’t tell me you fell for the energy bracelet scam 1:26
what is an energy bracelet? 😳 no those are just my personal collection of job passes and bracelets
Weirdly sensual.
Haha
Please, write ingredients in big bold letters.
I was interested in this recipe, but couldn't follow the video because it took me several minutes to figure out that the quantities were hidden in the upper left corner. By then I was halfway through the video. I don't do grams, so even though the recipe was in the video, I still cannot follow it. Please make the ingredients apparent AND, please include American measurements of cups, tablespoons and teaspoons.
This is a different style of video that aims to be minimal. I personally had no issues seeing the measurements and thought the video was beautiful and enjoyable due to those choices. Also another alternative view… convert the measurements yourself.
I love your cooking videos, but there is one thing I would like to see improved.
This is because kitchen tools such as kitchen scales are always dirty.
Some of the past videos had dog hair on them, which made me feel very sick.
I'm Japanese, so maybe I'm too particular about cleanliness, but it's unthinkable in Japan.
Since you are putting out such a wonderful cooking video, please use a clean kitchen and tools.
Duly noted.
😂😂😂@WatorWorks, Grown up in an island highly influenced by Japanese culture (Taiwan), I totally understand you. I myself is the type of person who needs to keep stainless steel utensil spotless and shiny. Also, I use alcohol to clean, from countertops to floors. Always wondering why baking UA-camrs never seriously clean their sheet pans and bake with char stained pans. But you know what? Those sheet pans with dark stains actually cook food faster and create better browning than shiny ones! (Check this video at 12:02~12:47. ua-cam.com/video/3YKuCR8HCLs/v-deo.html) Nevertheless, I won't change anything myself. But I think we can go easy with UA-camrs and focus more on those visually enjoyable foods they created in videos.😊
My main issue is time, not “wanting to clean” or that I don’t like a spotless house. I prefer to shoot a video and post it more than taking my time to make the shot spotless.
It’s all about priorities 😄. You all take care and be good!
The authentic Italian focaccia doesn’t exists!
There are a countless nrs of variations according to where you are!
Just check out focaccia genovese or pugliese
??? This looks like no focaccia I've ever seen and should not be called focaccia.
Bravo finalmente una buona ricetta 😊
Finalmente?!?? 😂
Wow ❤❤❤❤
