This dough is fabulous. My siblings called it their favorite bread. KAAP works in a pinch if you don’t have high protein flour (just makes the dough trickier to handle). If you want to try another sando combo: pistachio mascarpone cream (120g of blanched peeled unsalted pistachios, 6 basil leaves, 2 tbsp EVOO, half lemon juice blend until smooth, add in 150g of mascarpone and salt and pepper) sundried tomatoes, burrata and EVOO. Her olive oil and white wine dough has been a staple for years for me, but I rarely use recipes anymore. Hers are more beginner friendly, a bit thicker, but you can make doughs however thick or thin you want. A nice New Zealand Sauvignon Blanc in the dough and your glass is always a winner!

Pocaccia has become like a crispy India's Nan. It's a good idea to knead the rosemary in the dough. Of course, it's also a type of flatbread like pizza. It's a healthy looking food. I'll give it a try.

I used the dough making a thick pizza base and used prosciutto, mushrooms, marinara sauce and cheeses as topping after the dough had been on the grill for 7 mins; and then added topping to grilled for 8 mins. It turned out great! The dough was very flavorful!! Thank you! Definitely a recipe to keep. My son said it was the best pizza I had made. Will try out some of your other recipes for sure!!
I love focaccia, but I love this idea of separating it. It looks like it cooks better, and you dont have to slice it in half. Thanks! You are such a pro.

Now, why can't this be widely available? I thought this was called a pizza baciata. Though if ordering a focaccia, I'd expect something like your wonderful 1000-hole focaccia. There are undoubtedly many wonderful varieties.
