AMAZING CARROT CAKE RECIPE | The Perfect Easter Dessert!!

- If you are a fan of Carrot Cake this recipe is a MUST MUST try!! It is so moist it literally sticks to your fork! You can customize it your way whether you want nuts, coconut or raisins!
Its the perfect Dessert for Easter or that Special Birthday Person in your life!!
Ingredients:
6 C grated or ground peeled carrots
1 C light brown sugar
4 large eggs
4 tsp cinnamon
1/4 t nutmeg
1 C granulated sugar
1/2 C Vegetable oil
1/2 C applesauce
1 C DRAINED crushed pineapple
2 t vanilla
3 C flour
1 tsp salt
1 1/2 t baking soda
Additions: 1/2 C pecans or walnuts. 1/2 C coconut, 1/2 C raisins
Cream Cheese Frosting:
2 sticks softened butter
2 pkgs softened cream cheese
8 C powdered sugar
2 t vanilla
1/4 t salt

Karen, you left out the 4 tsp. cinnamon in the written section. Also, did you mention the temperature or did I just miss it? I think most cakes bake at 350 so I assume that is what it is. Aside from that, all I want to say is that I already have two "best" recipes for carrot cake, but maybe I will like this one best of all. I intend to make it. Thanks, because this really sounds good.
