PAT NEELY'S SWEET & SPICY COLESLAW
2 pounds green cabbage
4 carrots
1 medium yellow onion
1/2 cup mayonnaise
1/4 cup mustard
2 teaspoons apple cider vinegar
1 cup sugar
1 teaspoon black pepper
1/2 teaspoon cayenne
Salt and freshly ground black pepper
Directions
Cut cabbage in quarters and remove core. Peel carrots and onion and cut into pieces that would fit through the feed tube of a food processor. Fit food processor with the large-holed grater attachment and push cabbage, carrots, and onions through feed tube to grate. In a large bowl, toss vegetables together. In another medium bowl, prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, black pepper, and cayenne. Toss dressing with the cabbage mixture, and season with salt and pepper, to taste. Cover with plastic wrap and chill for at least 2 hours before serving.

I used to work right around the corner from Neelys on S. Third St in Memphis. Loved the slaw and used to get some to serve with my navy beans and cornbread. But this doesn't look like the slaw I loved. It's close.. but not quite the real thing.

How much slaw to do if you want to feed 100 people want to make for our family reunion? Also is this really hot or just have a hint of smoky slick kick
You will need 3 gallons. It shouldn’t be too spicy. Just don’t get too heavy on the cayenne pepper. Hope it goes well. Thanks!

You were doing great until the mayo. Use a good o;ovie dijon mustard for a little kick and yes the apple cider vinegar and honey insead of sugar. Mayo based colesaw is terrible compared to a true deli vinagrette coleslaw no decent deli would be caught dead serving mayo based coleslaw.
