I love making lasagna roll-ups. I've made some with meat and others with chopped spinach. Yum! I will sometimes cut the lasagna noodles in half to stretch it when I'm serving it at a family gathering with a large number of people. One tip I'll share. Don't put your mixture at the very end of the noodle because once you start the rolling process, the mixture pushes forward anyway. Whatever you smeared on the end of the noodle is only going to push out anyway. Your dinner looked good!
