EASY Instant Pot Beef and Broccoli Recipe

  • This Instant Pot Beef and Broccoli is absolutely delicious! This tasty recipe uses simple ingredients, is easy to make, and even easier to clean up.
    I suggest adding the broccoli later on or even taking it out after you cook it with your beef.
    OTHER INGREDIENT SUGGESTIONS FOR BEEF AND BROCCOLI:
    Choose a low-sodium soy sauce. This will help ensure the dish isn’t too salty.
    Check the sodium content on the beef broth as well. You can always add salt later if needed, but you can’t help if it’s too salty to start with.
    For the sweetener, you can use brown sugar or even honey.
    PERFECT MEAL PREP DINNER IDEA:
    This is a great dish to double if you plan doing some meal prep for your lunches or dinners. Don’t worry about increasing the pressure cook time if you double the ingredients.
    Another thing to consider is how much you cook your broccoli. I like to under-cook mine initially so that it is just the right tenderness when I microwave it later in the week. I don’t like mushy broccoli!

    INGREDIENTS:
    1 1/2 pounds boneless chuck roast beef cut into cubes or strips
    12 ounces broccoli florets (6-7 cups)
    1 Tablespoon olive oil
    For the sauce:
    1/2 cup beef broth
    1/2 cup low-sodium soy sauce
    1/4 cup sweetener (brown sugar or honey)
    1 Tablespoon corn starch
    INSTRUCTIONS
    Select the Sauté mode on the pressure cooker for medium heat and add canola oil. When the pot is hot, add garlic and sliced beef. Cook for a few minutes until browned, stirring frequently.
    Add beef broth, soy sauce, and sweetener. Stir together to dissolve the sweetener. Turn off the sauté mode.
    Secure and seal the lid. Cook for 15 minutes at high pressure.
    While waiting for the pressure cooker, cook broccoli by microwaving for 3-4 minutes until tender.
    When the pressure cooker is done, manually release pressure by carefully turning the release knob to its venting position.
    Uncover the pressure cooker and remove about 1/4 cup of liquid. Mix it with corn starch in a small bowl until completely dissolved and smooth, and add it back to the pot.
    Turn on the Sauté mode for medium heat. Let the sauce simmer for about 5 minutes to thicken it a bit, stirring frequently. Turn off the Sauté mode.
    Add cooked broccoli back to the pot and briefly stir to coat with the sauce. Serve immediately with a side such as cauliflower rice.

    I ABSOLUTELY agree with what others have said, more dump and go recipes WOULD BE SO APPRECIATED! I just got my Instant Pot on Prime Day, and like you, I just moved last week so easy recipes are wonderful (come to think of it, they are always appreciated, not just because of moving! 🙃) I am so grateful I found you and liked, subscribed, and rang the bell! 🔔🔔♥️ It would be so cool if you could post extra sometimes...I promise I’ll watch every one! 💖

    You are my #1 instant pot you tuber ! My “go to guy “ for dinner ... I just wanted to say THANK YOU 🙏....!!! I’ve been married 27 years and we just became empty nesters and I’m ALL BURN OUT on the meals I’ve made for nearly 30 years... so you have actually been a HUGE BLESSING..!!!     I used this recipe but instead of putting the broccoli in, I put it in a basket for the IP, sat it on top of the beef and steamed them. When finished I removed the basket of broccoli and continued with your recipe. When the beef mixture thickened I added the broccoli back in, gave it a quick stir and served. Keep up those recipes.

    One of my favorite recipes in the pressure cooker is unstuffed cabbage roll made with brown rice. Since brown rice takes 17 minutes to cook it is a two part cook to avoid overcooking the cabbage.

    You asked what we would like to see for more recipes. I would love to see some healthier dinner meals. No pasta, sugar, gravies, etc..... Thanks! Also, for this one, I'm thinking I won't add in the broccoli until after adding in the thickener. Since it's going to be warming up to boiling, I think that would cook it enough and still leave some crunch.

    My momma taught me that when you make something too salty, put a potato in it. IDK why that works, but it does help.

    I made this tonight! I added my frozen broccoli after I pressure cooked the meat and thickened the sauce. It only took a few minutes to warm it up and it stayed pretty solid versus mushy. Love your recipe ideas on this channel as well as your BBQ channel. You're so personable and I love how you edit your videos. :o) I'd love to see recipes using one main protein different ways, such as pork tenderloin. Thanks so much for sharing your love of the Instant Pot with us!

    That is a great looking recipe and I have to remember it and cook that dish. First, I have to find the corn starch to make the mixture to make the gravy thicker. I thank you for sharing it with us all.

    I love love LOVE all your instantpot recipes!! especially meals, not the desserts so much (but boy, they sure do look good! 🤤)-I spent the winter making all your instantpot soups & heartier meals, but how about more “summer” dishes? I would absolutely love to see (& try!) some warmer-weather instantpot recipes that youve come up with ☺️ (like, this beef & broccoli is a good one cuz it’s not a “soup” 😏 you know what I mean lol)

    There's a version of this that has you put the broccoli in after pressure cooking the beef, says to put the lid on and let it sit or just put on saute for a few minutes. It works really well to cook the broccoli just some, as opposed to mushy. It also has an option where you put the rice in a bowl on a trivet and cook the rice at the same time you cook the beef! It's more complicated )fresh ginger, ingredients I can't find (light soy sauce -- not low sodium light but something else that I can't find), oyster sauce and sesame oil which makes it too salty, though -- I'm going to try yours.

    Love your recipes! If you wait to add the broccoli until you are ready to thicken it, it can steam during the process and be more firm.

    Stuffed peppers, ham, rice sides or dishes. I would put less brown sugar. Add garlic, ginger, oyster sauce and a touch of sesame oil. Also leave a little more stalk on the broccoli and add after sauce thickens.

    There is a recipe for chicken pad Thai in "The Instant Pot Bible". Noodles are cooked in the pot too. Pretty fantastic. Would like to see more Asian-type recipes. Cheers! Brendan in Toronto, Canada

    I think a pot in pot or use of trivet for broccoli might help. Also didn’t like the quick release with the meat. Should be tougher than slow. Overall I agree steaming broccoli in MW is better idea but glad you showed this.

    Hi, what if when you put your broccoli into your instant pot you use one of your steamer inserts. Then you could pull the broccoli out before thickening up your sauce. Then place it back in the pot stir it up to reheat the broccoli. What do you think?

    Someone might have said it already, but you could set it for 0 zero minutes for the broccoli. That might keep it a bit more firm. It comes to pressure and is done. Just a thought.

    Please would you show us how to make a steamed treacle pudding. I think you may call it syrup sponge. There are so many versions but normal steaming takes around two hours plus so would be interesting to see how the instant pot makes it easier.

    I have an IP cookbook that says you can set the timer to 0 for delicate things (like veggies) so they don’t over cook. Quick release after. So basically it builds pressure only. I haven’t tried it yet, but I’m just sharing what I read.

    Have you ever tried Greek yogurt cold start up ?I find that initial warm up the milk process a bit of a bind .
    I use skim milk power x uht semi skim milk ,and a bit of the powered easy yo yogurt mix ,pretty good results 👍

    Hey Kristen, I like crunchy broccoli so I wait until meat and sauce is cooked then add veg at the end so it steams a bit yet is colorful and firm. Thoughts?

    Doing your beef and broccoli in the instant pot right now, almost done with the 10 minutes, then let the pressure off and do the broccoli. Think it will be good (like my broccoli a little soft anyway). lo Thanks

    I would love to see some freezer meals that you can put in the IP frozen. Would save me a lot of time! And usually I forget to take my freezer meals out the night before. So I thought if you can cook a whole frozen chicken in the IP, this might be possible. Or am I wrong?

    Have you tried wrapping your broccoli in foil before putting it in the IP? It will keep it much firmer.

      @@florawong85 Not really. To cook the carrots, you should dice them and add them as soon as you cook the beef. You don't get the carrot flavor but you do get the sweetness of the carrot's simple sugar. But it's all pedantic. :)

    You could probably use the sauce function to 'stir fry' the broccoli then remove and put aside and add back after you are done thickening your sauce.

    If you want your broccoli to be firmer, set time to 0 instead one 1 minute. it will come up to pressure and go to NPR.
