  • Today’s video is all about food. In celebration of #veganuary2024 we’re sharing some of our go-to hearty and delicious vegan meals (perfect for the winter months). Que aproveche!
    RECIPES
    Granola:
    - 500g Oats
    - 2 bananas (mashed up)
    - 2-4 Tbs Coconut oil (melted)
    - Cinnamon
    Mix all in a bowl and spread on an oven dish. Bake at 170°C (300°F) for approximately 45min.

    Cut sugar in 1/2 or more!
    Curry:
    - 1 can coconut milk
    - 1 pack tomato sauce (plus a little bit of sugar to cut acidity)
    - 4 cloves of garlic (minced)
    - 2-3 cm (1 inch) ginger (grated)
    - Optional 1 onion
    - Chilli to taste
    - 1 big bell pepper (diced)
    - 2 tbs curry powder
    - 1/2 tsp cinnamon powder
    - Optional additional spices: cumin, coriander, garam masala, turmeric, black pepper
    - 3-4 cups diced butternut squash / pumpkin / sweet potato
    - Veggies (I specially like adding greens)
    - 1-2 cups red lentils (rinsed) or preferred legume (precooked)
    - Salt to taste or veggie stock
    - Lime/lemon juice for garnish
    - Optional fresh cilantro/preferred herb for garnish
    Heat up 2 tbsp of oil in big pot. Add garlic and ginger (and onion if you choose to add it) and sauté. Add dry spices and stir until fragrant. Add tomato sauce (plus a bit of sugar), vegetable stock / salt, coconut milk, red lentils, and all vegetables that need a longer cooking time. Add some water if needed, to cover all the veggies. Bring up to a boil, then down to a simmer. Cook until the lentils are done and butternut squash / pumpkin / sweet potato tender. Add remaining vegetables and cook for a bit longer. Ready to serve with grain of choice, plus garnishes.

    Rice bowl:
    There’s a million and 1 ways to make yourself a rainbow rice bowl, but to make them like we do you’ll need
    - Rice or gran of choice (we’re particularly fond of glutinous Thai rice)
    - Fresh elements: we like grated carrot, cucumber salad, diced red pepper, iceberg lettuce..
    - Cooked elements: we like crispy tofu..
    Prepare elements that need to be cooked, cut up the fresh bits, and serve in a huge plate/bowl. Garnish with soy sauce/tamari, a bit of sesame oil, and a bit of vegan mayo if you want it to be extra tasty. Oh and you can add pickled ginger if you like it.
    Tortillas:
    Again a dish that can have many different fillings, but for the ones we make here you’ll need:
    - Corn tortillas
    For the texturised soy:
    - texturised soy
    - spices (ginger, garlic, chilli, turmeric, salt and black pepper powder)
    - tomato sauce
    - bell pepper
    Add boiling water to texturised soy and let sit for a bit. Rinse and add spices of choice and let sit for a bit. Sauce soy in a pan with a bit of oil. Add bell pepper and tomato sauce and let cook till tender.
    For the Cauliflower:
    - Cauliflower
    - Lemon/lime
    - Paprika powder
    Lightly Sauce cauliflower with some paprika powder and salt. When ready (should still be crunchy) add lemon/lime juice
    For the sauces:
    - Fresh herbs, vegan yogurt and lemon/lime for white sauce
    One pot Chili:
    - Beans of choice
    - 4 cloves of garlic
    - 1 Onion (diced)
    - 1 big bell pepper (diced)
    - 1 pack tomato sauce
    - 3-4 cups diced butternut squash / pumpkin / sweet potato
    - Veggies (I specially like adding greens)
    - Lime/lemon juice for garnish
    - Fresh cilantro/preferred herb for garnish
    - Nacho chips to accompany
    Heat up 2 tbsp of oil in big pot. Add garlic, onion and bell pepper, and sauté. Add dry spices and stir until fragrant. Add tomato sauce (plus a bit of sugar), vegetable stock / salt, beans, and all vegetables that need a longer cooking time. Add some water to cover all the veggies. Pressure cook until beans are done and butternut squash / pumpkin / sweet potato is tender. Add remaining vegetables and cook for a bit longer without the cap. Ready to serve with garnishes and nacho chips.

    Very well done. This is my first time to watch your channel and I am impressed. When I saw that it was over 40 minutes long, I second guessed it and thought that I would only watch a few minutes.     We love what you are doing and achieving, we are old school and definitely not vegan or for that matter vegetarian but how you live and cook such a variety of meals is inspiring. What we do as Brits living in southern Spain is can. We have invested in a pressure canner, jars lids and rings which with your cellar space would work great especially as you say you want to bulk buy great vids keep them coming

    I only found your channel about a week ago - but I've been enjoying your videos so much i've nearly watched them all! Those pancakes look so good. I tend to find the same with American recipes - too much sugar! I might make the carrot cake today (but half the sugar!)

    This is so long after your video it might not even be relevant anymore, but your fatigue reminds me of when I also experienced excessive fatigue for no apparent reason... turns out I was low on vitamin B12. I've heard that's hard to get in a vegan diet, but nutritional yeast and fermented foods can help.
    Love your videos - Discovered you last week and have been going through all your Spain videos and catching up :)

    Hello, kijk zo graag naar jullie en de geweldige plek waar jullie wonen. Super gezond eten. Toch wil ik iets kwijt. Je verhaal over weinig energie…. Zie dat je veel bonen eet of anders gezegd groente hoog in koolhydraten. Brood of granen zijn funest voor je energie. Zelf laat ik brood rijst pasta en groentes hoog in koolhydraten staan. En merk enorm verschil. Het zet zich om in suikers en dat vreet energie. Ik ben dan zo moe en hoog in mijn emoties. Lief bedoeld en hoop dat je er iets aan hebt. Heelveel succes met alles renoveren.     I keep adding to my post, but I thought I would just start a new one, to make it a bit less imposing?!? Anyhow, your sweet story about the note, “ you are great”, reminds me so much of the note and small gift my hubby gave me years ago, when our relationship was a bit in a funk. He had gotten me a sweet silver heart necklace first Xmas, and with it, he wrote a note that read “ You still have my heart”. The necklace was sweet, but the note meant so much to me, that even after all these years, I still have it in a tiny frame, sitting on my bedside table. I also have that same sentence tattooed on my arm, in his handwriting 🧡

    Das reinigen der Glasscheibe des Kaminofens geht am besten mit einem nassen Scotchbritt den man in Asche taucht. Das funktioniert ganz ohne Reiniger. Danneinfach abwischen und fertig.

      Ja, den Schwam auf der rauen Seite nass machen und tief in die kalte Asche tauchen. Der Ruß geht wunderbar weg. Ab- bzw. sauber wische ich immer mit einem Papiertuch.

    you should be able to grow some of your legumes eventually, once you start growing your gardens
    loved this episode of what you eat, i am a meat eater, since i was very young; not so much now though as meat is getting very expensive; i have tried several times to go vegetarian but don't know enough about nutrition I eat eggs & lamb/goats cheese occasionally; i have my own chooks
    do agree that our meat consumption has gotten out of hand, pretty sure when i was young we didn't eat so much;
    would love to learn more simple recipes & what is supposed to go together (i.e. legumes & grain) will you be doing more cook from scratch as time goes on?

      Hello there, I eat 100% local produced food only.
      Because I have diabetes, no sugar and carbs for me anymore.
      I don't want to go an insuline.
      So I eat Carnivoor.
      Its all produced, and sold by a farmer. Butter, yoghurt, cheese and Meat from "Schotsehooglander, nature grazed Meat.
      All within 10 km from my house, a go there by bisicle in Drenthe Netherlands.

    Good advice - the beat way to start fire on firepleace is from the top, not buttom. Just read about that, its good to your chimney, fire stay longer, crate transparent exhaust gases, its more ecological way. Just saying 💚🌎

    When you can, it would pay to buy a blender with which you can make your own milk. Buying oats in bulk certainly pays off in the long run.

    Hello! I wish you both the best. You are so sweet and I sense your genuine ambitions. I really share most of your thoughts and feelings about life style in general but there is one aspect that I would like you to consider and maybe reflect upon. The beautiful place where you have chosen to live is also a place where sustainable animal farming has been an essential part of life for centuries. Grazing animals are the reason to all the open and beautiful views that you enjoy today. One of the many problems for our planet is our over consumption (due to over population) which has lead to an awful meat industry. The problem is NOT the small scale farming where you produce your own meat from grazing cattle which keeps the lanscape open, the honey that the bees have harvested from the grazed meadows or the eggs from your happy, free ranging hens. My worries are that if you bring vegan life style beliefs to the actual country side that this might not be the right way to do things. I totally agree that if you live in a city you feel like being vegan is the best option, so would I!, but now you´re not and maybe your views on animal welfare can be nuanced. There is a possibility that you could drink milk, eat cheese and eat the meat from cows that have been grazing and having a wonderful cow (not human) life. Take care!💚

      Hi! Firstly I want to really thank you for your kindness and for making this comment in such a respectful manner. We really appreciate it!
      The points you bring up are of course ones we have already considered and have our own opinions on, so I hope you don’t mind that we give you a response. We agree that if you are to consume animal products, sourcing them from places like where we live is definitely the most ethical way to do so. We also have personal relationships with many of the farmers around us and wish them the very best. We do not however feel confortable personally supporting the farming practices by consuming the products they produce. And this is for a multitude of reasons..
      Environmental: As you correctly state, grazing is what keeps the landscape here open. It is also the reason why all the trees in the area were cut and why ilegal human induced fires are a yearly occurrence, as they aim to make sure public land does not become wild and is instead dedicated to farming. Our planet needs more rewinding, not more land dedicated to farming, and as these practices are not compatible with how farming is carried out here, this has broad consequences. This has to do of course with the carbon sequestering difference between grass fields (used for cattle) vs. wild grass meadows / forests etc. But also, the wildlife that can coexist. The barren landscape here influences the amounts of wild animals that can live in the area, and the presence of cattle also translates into very important large carnivores (like the wolf) being disliked and severely hunted (if they exist at all).
      Animal welfare: Whilst the cows here are definitely having a much much better life that those in industrial farming, I can tell you that I still see situations that I would never want to be responsible for. There’s elements of suffering that the farmers cannot control, like the diseases that are becoming increasingly common and that have led to us witnessing so many dead cows at the side of the road this summer. But we have also found a lot of behaviours towards the animals that explain why they are more often than not so afraid of us humans. Furthermore, witnessing the moment the calfs are taken away to be sold, is one of the most heartbreaking things of living here. I have seen the mothers running behind the trucks and crying for hours afterwards. And that’s before taking into account the fear these animals go through when taken to cattle fairs, being auctioned and ultimately going to slaughter. I personally will never be okay with being the cause of that type of pain.Therefore meat, milk and cheese are not an option for us.
      There are other animal bi-products that we are flexible on. We once in a while get eggs given to us by people that have free-range chickens, and we also sometimes buy local honey.
      Socio-economic: Seeing the local agricultural practices and how much local farmers struggle to make ends meet, even in a world where the consumption of their products is very much the norm, we don’t think keeping these models going is a sustainable solution. I hope the area can transition instead into other nature-related economic models that lead the local economy to flourish and the locals to actually making a decent living. And we hope that the nature here is taken care of and enhanced in the process.

    Precisamente, el lugar en el que estáis tiene un importante número de pequeños ganados que práctican la ganadería extensiva.
    Eso es lo opuesto a la industria de la carne.
    No pretendo discutir vuestros hábitos alimenticios, que me parecen muy bien. Pero si que tengáis en cuenta que la pequeña ganadería extensiva garantiza el bienestar animal.

      Nosotros tenemos un gran respeto por nuestros vecinos, los ganaderos de la zona, y les deseamos lo mejor. Trabajan muy duro y reciben muy poca recompensa. También estamos de acuerdo en que, en caso de haber decidido consumir carne y productos lácteos, obtenerlos de ganaderos como los de aquí es la forma más ética de hacerlo.
      Pero, desafortunadamente, la pequeña ganadería extensiva no garantiza el bienestar animal, aunque sí reduce considerablemente el enorme sufrimiento que causa la industria de la carne. Es más, es el estar aquí, viendo las prácticas de ganadería de cerca, lo que me ha confirmado que el bienestar animal en la ganadería (para carne y productos lácteos) no es realmente posible, ni siquiera realísticamente compatible. Es por esto, y por otros temas importantes para nosotros, que decidimos comer como lo hacemos.
      Espero que esto haya sido útil para comprender nuestra perspectiva. ¡Te deseamos todo lo mejor!

    Вам надо менять камин! Он не эффективен. У нас в России топят печку один раз в день- утром. И весь день день тепло в доме, только в -30-35 топим два раза в день. И дров уходит меньше , чем в вашем камине. И готовим на печке……

    Human food consumption has involved raising, butchering animals, for so many years. We are starting to understand that so much of this is so wrong, and unhealthy, for both humans, and the poor creatures living stolen lives. Horrifically, specially here in the US, but I’m guessing in many other places on earth, this has turned into factory farming, where the poor creatures live horrifying lives. It hurts me so much to think about this as I’m typing this 😢.
    Fortunately there are so many more options for those of us who are choosing not to participate in that lifestyle any longer. Being a vegan, or a vegetarian has become so much easier. There are so many more options now.
    I hope I’m not going to be insulting by asking you this, but is there an address that we can mail you stuff to? I have a couple of ideas of small items that could make your lives a tiny bit easier. No worries, it’s nothing big or expensive., and no animals have been hurt by creating these things 🥰.
    I’m loving your recipes, and tomorrow I’m going to make that curry dish. I’m thinking of adding tofu, and maybe lemon grass 😋

    All I hear from you is how tired you are all the time. Perhaps getting nutritional counseling with respect to your vegan/vegetarian diet is needed. Women have different needs than men and I don't think yours is right for your needs if you're exhausted all the time.

      Thanks for the concern but its not my diet. I'm getting medical help and have gotten all sorts of tests done. I'm not missing any nutrients and my values are all healthy. I hope to find a solution soon 🙂
