- Daisuke Nakazawa is the co-owner and sushi chef at Nakazawa in Greenwich Village, New York, one of the city’s most renowned destinations for omakase. He serves a style of sushi inspired by his adopted hometown, taking the skills he learned during his his 11-year-apprenticeship at Sukibayashi Jiro - of Jiro Dreams of Sushi fame - and applying them to ingredients and flavor profiles that would ruffle feathers at home in Tokyo. Always rigorous, but never a purist, Nakazawa’s drive to become number one is helped by his refusal to be bound by dogma.

Well by Japanese edomaezushi standards, nakazawa is really experimenting. Though there's a fine line between experimenting and taking the piss. Lettuce on rice certainly is something... but I don't think it's sushi.

I'm so happy to see Daisuke san so happy in New York. It must be so difficult to turn things around inside you after working for Jiro san. He could be the most dedicated Sushi apprentice in America making sushi right now. If I were lucky I'd live in New York.

usually you dip the fish side into soy sauce and put it in your mouth fish side. They do this to prevent the rice from getting soggy/falling apart
ForceOfWizardry ask a respected sushi chef and many will tell you upside down is better but not all. There is no ancient secret one way to eat sushi. Eat it how you like it but show respect to the chef.

I want someone to fly Jiro out to try his disciple's food. Given how much Jiro loves and innovates I reckon he'd be proud. I mean, thats if you can get Jiro to take a day off, let alone a week or two.

Nice to see his humble approach to fish. Like serving salmon because it's simply delicious, and wanted by the customers. That's the mindset to make a business work. I'm sure Gordon Ramsay would approve. :)

I would absolutely love to go there. I had an omakase sushi lunch at Yasuda, and was enraptured. It was so delicious. There were business people just chatting around me at the sushi bar popping the little perfect morsels in their mouths without noticing. I couldn't believe it. Each one was presented with care so perfectly, warmed by the chef's hand, perfect rice, and seasoned already. Gorgeous. The next time I visit New York I will try Nakazawa.

Nikeel Weizman Jiro has several successful former apprentices who trained for many years too. Harutaka, Masuda and Mizutani are now famous in Japan. Sadly Mizutani will be closing this month.

You know you're GREAT at something when you serve customers what YOU want... and they have no say in it... lol...

I would much rather eat at this gentleman's sushi restaurant than Jiro's... Sure, Jiro is an absolute master at his craft, but the atmosphere he radiates is... Intimidating. On the other hand, this guy has a great personality, warm and friendly, easy laughs. Plus his sushi is likely also outstanding. I'd much rather prefer a sushi master I can talk to and laugh with than one who stands there silently with an air of deep seriousness. That, and since I wouldn't know how to eat all the dishes properly, I'd want to ask, and I get the feeling Nakazawa would be much more accommodating than Jiro. I could be wrong, but that's just my thoughts from what I've seen.
