I have translated it into modern directions for you to enjoy ^_^ please make it and let me know what you think! Thank you for watching. Parsley Pie, 1823 1 chicken, cooked 0.5 cups of chicken broth 2 cups of parsley, picked from its stem 0.5 cups of spinach, shreaded 2 pie crusts 0.5 cups of cream 1 cup of milk 1 walnut size ball of butter 1 tablespoon of flour Salt & pepper to taste Directions: Combine your parsley, spinach, milk, salt and pepper into a cooking pot. While frequently stirring bring it to a simmer over your heat and then immidetly remove. In a large bowl shread your cooked chicken. Into this bowl pour in the scalded greens and milk that you just prepared. To this also add the chicken broth. Mix throughly, being sure to taste it to see if it needs anymore salt or pepper. Line the edges of a pie plate with crust and begin to spoon in the chicken filling. Cover your pie with a top crust that has had a hole cut out of the top. Restore the plug to this hole while baking, however. Bake at 375 degrees for 30 minutes, or until the crust is done. Remove from your oven and remove the top crust plug. Through this hole slowly pour in the following: 0.5 cups of cream + a melted ball of butter rolled in flour. Carefully tilt the pie plate around and around to let this sauce incorperate. Enjoy!
This looks wonderful - I might let the sauce thicken a bit more or the pie sit longer so it is less watery, but that is probably a modern idea! Your pastry always looks amazing...I need to practice.

I watch these every single night before bed. I’m going through a great deal of family matters right now so it really helps. I lay my baby in my chest and then I have my older baby beside me and we go to sleep
This is a lot different from the 2023 version in which you add 2 cups of left-over chicken to a can of condensed cream of chicken soup, stir in 1/2 a pkg of frozen peas and carrots, and bake in a pre-made pastry for 30 minutes. Two hundred years ago, they really had to WORK for every meal. 😋
If that isn’t a great example of how society advanced in the wrong direction.. so much unnecessary chemicals in that stuff. I’m really glad that I live in a country where most of those food chemicals are forbidden and that I live in the countryside where I can get lots of regional products and meats directly from the farm :) Also a Self cooked meal is often even cheaper then the stuff you buy at the store. There must be places in America where this is possible too!
@@rolux4853 Yes, the chicken stock, flour, and cornstarch might react with the peas and carrots or the flour, lard, and salt in the pastry, all of which were available in the 1800s. Those dangerous chemicals are delicious, but not as safe as having to slaughter your own chicken and risking salmonella poisoning like in the 1800s. 🤣
My six year old and I love watching your channel. Sometimes I count it as a homeschool lesson. This morning he commented that I was organizing our kitchen like the '1800s kitchen lady'. He was right! We live in a tiny house with limited shelving and your channel has inspired me to get rid of the excess and focus on just the essentials. It's so much better! Thank you for a great channel!

I'm sure it's portrayed that way for the video which makes sense, but you can imagine it was probably more hectic in real life, not unlike how today's cooking can be sometimes, especially if you've got a lot of bustle going on around you or you're in a rush or the recipe goes wrong etc. Imagine if there were a bunch of little kids and babies around.

I didn't grow up eating a chicken pot pie, but I tried it for the very first time a few years ago. While I didn't love it at first, it reminds me of the hearty meals I had growing up. A chicken caldo (soup) being one of my favorite comfort foods; this looks fantastic. My mouth is salivating: great historical piece by the way.

Chicken pot pie has been a favorite of mine for a long time, interesting that they used parsley and spinach in theirs. It does look good though, probably not as heavy as the modern one today. Thanks Justine for another great video!

My grandmother loved to cook on an opened fire. She had a type of lean-to where there was 3 hearths and many days she cooked there. In the kitchen, she had a cast iron stove fulled by wood or coal. She did all her baking in that oven. When i was 11, my aunt convinced her to get rid of that stove and bought her a propane stove. My grandma never got used to that thing. LOL. She continued to cook on an opened fire. I love watching you cook. ❤️
I have made this twice over. I had to wait until Easter. The first was precisely to recipe: delicious. 2nd time I forwent the cream and it's good, but I don't miss the given by the cream as it's in the 70s and 80s this week in South Carolina. I've adapted it to spinach, leeks, and asparagus as those are the greens I had on hand. Just as good.

I use vegall and top with rolled out cerescent rolls !! It's so good but bet Justine's receipt is better cooked in a hearth !!

I do love spring time. Dried Parsley flakes are pretty strong but you really went whole hog using big and fresh leaves!
