  • Cornbread
    #8 Cast Iron Skillet
    3 tablespoons oil, shortening or lard
    1 tablespoon Bacon Grease (if you have it on hand)
    1 cup Yellow Cornmeal
    1/2 cup all purpose Flour
    1 teaspoon Salt
    1/2 to 1 teaspoon Baking Soda
    1 tablespoon Baking Powder
    1 cup Buttermilk
    1/2 cup Milk
    1 Egg
    Preheat the oven to 425 degrees F. Place the oil and bacon grease in your skillet and put it in the oven to warm. In the meantime, in a large mixing bowl add the cornmeal, flour, salt, baking soda and baking powder. Whisk to incorporate the ingredients. Then add the buttermilk, milk, egg and the oil from the skillet. Stir together and pour into the skillet. Bake for 30 minutes until the center is done. Serve with butter for extra yumminess.
    Thickened Stewed Potatoes
    2 cans whole potatoes
    1 teaspoon Bacon Grease (if you have it on hand)
    3 tablespoons Butter
    Fresh cracked Pepper
    2 tablespoons all purpose Flour
    1 cup Milk
    Open the canned potatoes and place into a pot with the juice from the cans.
    (If you have time you can peel a few potatoes and chop into big pieces. Boil them for 10 minutes to precook them) Heat on medium and add the bacon grease and butter. In a small glass whisk together the milk and flour to make a slurry with no lumps. Pour into the potatoes and bring to a boil while stirring. The sauce should thicken within a minute or two. Turn the heat off and add the Pepper to finish. Serve immediately. If you are unable to serve the potatoes and the sauce thickens too much just add a little more milk and heat to loosen.

    What a great idea, especially for a good comfort food. I grew up eating these at my grandmother's table and yes !!! , on top of buttered cornbread. YUM !!! Thank you so much for doing these videos with real Louisiana cooking. I'm making this tonight. 😋

    Amy if you will crack an egg on a flat surface, you won’t get shells in you bowl. It’s when you crack them on the edge of something that does that. I learned that watching another cooking show and it really works. Your shows are my favorite to watch.

    I use a cornmeal that is by Tinder bake. You can get white or yellow. I use Virginia's best flour. I live in VA. I was out of my flour and I used some that David had abought and it was Martha white. We know that is good flour, but It really made my cornbread heavy. It still tasted good but it just seemed to be heavy and my cornbread is usually light and airy and fluffy. I could not believe the difference. It is. We have a place called Mabry Mills and they do flour and cornmeal and other items in that line. we have bought it several times and they put it in a nice bag and I have never used it. I set it up so that I can look at it and it gets to old to use. Thanks for sharing

    Oh Amy you are cooking stuff like I grew up on. My mother would get up and make a big pan of biscuits for breakfast and she's usually cooked at least one pan of cornbread every day,she'd throw out any leftovers to our dogs.i really enjoyed this video,it brought back such sweet memories of eating these thickened potatoes and cornbread.     I grew up with potatoes made something like that but we used cheese (or sometimes velveeta) and made cheesy potatoes with cornbread!! It’s extra yummy like that and a meal in itself!! Thanks for sharing Amy ❤️😊❤️

    Stirring with a fork in a metal pot gives me goose bumps…ewe….however, the potatoes look good. Gonna buy me those canned. Also the cornbread looked divine.

    I have never heard of stewed potatoes!!! I can't wait to make those... But canned potatoes??? Never had them either.

      So, so, good and fast. Growing up my grandmother's made them from their garden potatoes. Thus is a, super quick way, to have it.

    OMG.. That came out amazing!! That looks delicious.. I would tear that up like a puppy does a newspaper.. 😅 but you know Chef Amy, your mother was a great woman just like my mother and grandmother who raised me.. We loved watching them create foods that we fell in love with as a kid and now we try to recreate them.. So I must say, good job to for this beautiful recreation of what you learned from mom.. No matter the color of the corn meal.. That was pure YUMMY GOODNESS!! 😍 Corn bread was perfect.. nice...

    My grandmother used small red potatoes and put thickening in at the end. Great with a big piece of cornbread. Memories.

    I grew up eating my grandma Nanny's creamed potatoes that's what she called them. She always used the small red potatoes. I'd help scrap the skins off with a spoon. Oh the memories! 💜🖤💜🖤

    Looked so yummy would have never thought of canned potatoes 🥔 you fix food us southerns grew up eating. Best food in the world. Wish some if these young kids would try it !     We love stewed potatoes. I served them to my family a lot when they were growing up. I had 2 teenage boys and a 12 year old daughter. The boys could eat the house down. I would have to cook a 2 pound bag of pinto's. My neighbor couldn't believe, I cooked that much at a time. I told her she didn't have teenage boys and couldn't understand until she had one. Believe me my boys were very active and not over weight. One was into track and football, the other was off on his 10 speed. That kid was a lean mean pumping machine. 🤣 I guess that explains why teen boy need so much food. Love you and your hubby, I hope your meal was as good as it looked.

    I’m from WV & your potatoes look like what we call “creamed” potatoes! Usually made with first few from the garden, lol!

      Yes. I'm from Northern Virginia and that was how I grew up knowing them - creamed potatoes - first, small ones from the garden.
      Actually, especially with Easter coming up, I hope you don't mind my saying, it's Christ that you should aspire to be more like - just as I know Amy and John do and all who love the Lord. Pam, you have a great last name. I hope you know that the Lord is our Rock.

    Hey there, my Sunshine! 🌞 Love to see your smiling face. I hope you’ve had a great weekend. I watched some of your older videos last night because I’ve been pretty sick again. Nothing new. Same ole same ole! But you brightened my night. Girl, I’m finally hungry tonight and it’s almost midnight, all I’ve had is some yogurt today. That cornbread is calling my name! I would eat anything I could heat and crumble a piece of cornbread into. Like your potatoes! 😂 It got so cold down here I was freezing last evening and night. Today in the 50’s and tomorrow 70. It’s crazy! My feet felt like popsicles until about 2-3 am. Finally with my electric blanket they finally got the feeling back in them. My sweet sister came down here after dark and got my blanket hooked up. My heater quit….I can’t think of anything else around this place to tear up, so there’s good news here! 😂😂 Have a good week.     Now that's what kind of food I was raised on. My daddy raised our taters, and when it was time to harvest them we'd be out there barefooted picking them taters up off the ground, sometimes we'd have to get on our knees cause we didn't want to leave not one behind! We 'd have fresh stewed taters and cornbread for supper! I show nuff wish I had me some now!

    I love the potatoes fixed like that. We called them potatoes in thick sauce. I haven't been able to make them so that they taste the way my mama's did. I believe I'll give your recipe a try. My mama always put a knife under her cornbread like that so it didn't get soggy.

    My mother made stewed potatoes like that, but she didn't use canned potatoes.i make them too. I only use yellow corn meal too.

      Yes, Linda, I grew up knowing them as creamed potatoes, too. Once I saw creamed potatoes on a menu at a restaurant and was so excited bc I hadn't had any in so long. Then I was so disappointed when the waitress delivered I grew knowing as mashed potatoes! I live in Virginia and I guess it just depends on where your from as what they call things.
      It seemed the only time my mom (or I) fixed creamed potatoes was with new potatoes. So I'll have to give the canned potatoes a try. And I wouldn't have thought to add the bacon grease in with them for that added touch of flavoring. WoW! Amy thinks of everything.

Growing up that was how we made them with new potatoes so it only seemed to be a certain time of year to eat them. I was craving them one year way back and had no new pots so that's when I thought of the canned ones. They will definitely end your craving for them😊💜

    My mother in law passed down a potatoes recipe that was her mother's and she used cornmeal to thicken her potatoes and not many people make these recipes
