Well time to use some alternative preperation methods then. Here is one for french fries: 1. Clean, peel and cut the raw potato into fries, 1cm thick on the short ends. Lets be exact here, bring your ruler. *adjust glasses* (Unfortunately potatoes are not even so they will have to be about 7-15cm long, depending on the size of your potatoes. 2. Evenly distrobute the raw fries inside of a vacuum bag and a tea spoon of H2O (Normal drinkwater is fine too.) and seal the vacuum bag with a vacuum sealer of your choice. 3. This is the important part, fill an ultrasonic clearner with water so you can submerge the entire vacuum bag inside of it. Turn it on for about 20 minutes on the high setting. This will break apart potatoes external structure and the... I actually have no idea what is actually happening to the potatoes at this point but trust me it works. 4. Immedietly after the ultrasonic bath, open the bag and carefully lower the fries into pre-heated oil and deep fry until golden. The fries will be the crispiest best fries you'll ever have. All at the low low cost of an ultrasonic cleaner. Which is a great tool for cleaning say jewelry and small mechanical parts like all those loose screws that Jamie drop whenever he opens his mouth. Have fun my nerdy friends!

Look up the pizza oven on his channel - there really isn't much that can top that level of food-nerd. Seriously, a video call, phone call, or even a tweet from him would permanently cement this week in SortedFood history. I haven't nerdgasmed this hard in a long time, probably not since he announced the return of Good Eats a little while back. As always, keep up the awesome content. You can actually make oil-free popcorn quite easily at home! Just pour about a handful of kernels into a big microwave safe bowl, pop a plate on top of it and heat it on the highest setting in the microwave for about 2-3 minutes. It works really well for me and won't burn if you take it out at the right time! Just remember that the bowl is probably super hot when it gets out so it's perhaps not the best idea to use it as a serving bowl
what could I substitute the dried mango for? I'm not particularly a fan of mango but I do love the other flavors in here. maybe candied ginger since there's already the powder?

well there is 1 sciency stuff to try to make liquid solid beads.what you do is put half cup oil in the freezer for 30 mins to thicken and become cold then in the meantime get some gelatine and some water then heat up your stock and add into it the gelatin mixture and get your dropper ready.then take the oil out of the freezer and drop into it with the dropper your stock and then strain out the oil and what should remain is the stock solidified and look like beads..
If you are coming to Chicago during the summer you should get a spinach deep dish from Piero's Pizza in Highland Park and then walk over to Ravinia Festival to enjoy a concert (it is about a half mile walk through a nice neighborhood). Great pizza and a great way to enjoy it!
I wonder if they will try the seaweed gelatin bubbles. They were inside of a ice cream cake i had once still can't figure out how the liquid bubbles were not frozen has to be something tricky going on with science there. Awesome effect though.
My mom made similar treats for my bake sale contributions in primary school, it was always popular. In high school my brother and I preferred rice crispy treats. Just swap out the popcorn for rice crispy cereal. :-)
If you want to, you can use an ice cube tray and at the bottom of each cube molds, depending on your chocolate use the opposite color and make a design, like a smiley face c:

I've found that putting the kernels all in at the same time as the oil (when the oil is cold) that works just as well too.

If you freeze the kernels before you pop them they have a better flavor and they take on the seasoning a bit more.
