ahngele, Even though you think you cooked it too long, it will still be tasty. My aunt always cooks spinach for a long time for her own taste. She even adds hot pepper powder in it.
Wow...just tried this recipe this evening & its delicious! Never knew spinach can be this good. I really think its the process of quick boiling, shocking in cold water then wringing water out makes the spinach able to soak up the flavor of the seasoning = Wow taste.

I am using dark color soy sauce (in korean jin gan jang). I handle uncooked sesame seeds this way: Wash and rinse sesame seeds and drain, then cook them on a wok without oil. Keep stirring them until they look golden brown and crispy.

Here in the Philippines we boil or steam spinach and we put lemon and fish sauce to taste or we add it in mung bean stew . :) We never eat it raw as well.

I love spinach panchan in Korea. Now I learned how to cook it this way thanks to your video. I'm surprised that you're surprised to see people eating raw spinach. It has a lot of Iron so is actually better for our health raw then cooked. In my country we eat it in salad with olive oil and lemon but also boiled as a sauce with tomato, onions, beef and corn polenta. Anyway good vid.
