Wow, they are actually hand made: mixing, kneading, rolling, and cutting the dough by himself. Pretty much all of the other “hand made” udon guys are a fraud since they use machines to do all of this but apparently they are “hand made” because they don’t buy it from a large manufacturer. These here are actually hand made, and the place is definitely a place I would love to go to.
That is Katsuobushi - made from pieces of Bonito fish which have been cured, smoked, and dried. Afterwards, it is shaved or shredded into flakes. It has a smokey and savory taste that is similar to cured ham. Katsuobushi is frequently used as a basis for Japanese soup stocks.
That is the traditional method for kneading the Udon dough. It is believed to result in better gluten development compared to machine produced noodles.

I went here last month. It was exactly like as in the video, noodles were great. There was a queue in front, we had to wait ~30 mins for a spot
