- Join Rick Martinez as he makes Tacos Placeros. This time we're stepping out of the Test Kitchen as Rick takes us to Queens to find the best Tacos Placeros in New York City. What are Tacos Placeros, you ask? Well, they're giant plate-size tacos that have a little bit of everything in them, traditionally depending on what's available! They can include various meats, but these particular tacos from Horchata Deli Grocery feature deep-fried, stuffed chiles rellenos.

@@SamuraiBatgirl I'ma take a stab and say it is a look at trauma on indigenous populations caused by colonialism with written pieces being the primary source used.
There's so much to love about this but most importantly thank you Rick and BA for using your voice to represent Mexican-american culture.
This country is so much stronger due to the contribution of others and our Mexican and Latin American brothers and sisters have added great spice ( no pun intended) to our melting pot. We are so much better united than divided. BA celebrates this and makes me so happy.

I strongly disagree. I am not Mexican American but as a Mexican he really is a terrible representation in his understand and also his use of Mexican Spanish, always blunt and rude.

I really appreciate that hes looking into tacos, so authentic, watching them make chiles rellenos was exactly how my mom makes them, she hasn't made them in so long 😭
My mom also makes a type of caldo, she takes cauliflower and uses that same egg batter and fries the cauliflower and adds it to a tomato based soup (she also does with her chiles rellenos) 😩 so delicious I miss that dish so much! This was a great video and I cant wait to see what he came up with!

I have to say, I'm really impressed with Rick's spanish!! of course i know he's latino but not all latinos born in the US speak spanish that well! he has an accent obviously bc spanish must be his second language but still really nice :)

They're in New York so I can 99% guarantee it's Maseca and water.
I am mexican born and raised and this is the way to do it 🗣🗣
1- In a bowl add 1cup of nixtamalized corn flour (has to be nixtamalized, it's a special process corn has to go under in order for the tortillas to taste that good. I've also heard gringos just call it "masa flour")
3- Add a pinch of salt to the flour
2- Add 1¼ cups of water, mix everything in and knead until you get a beautiful smooth masa (should basically feel like play-doh)
4- (Optional) Some people like to let the masa rest for like an hour to let the flour hydrate good, but you could just get started right away
5- Take bits of masa and roll them in between your hands to make spheres
6- You could use a "tortillero" (that round tool the lady's using in the video) or you could just "tortear" by hand, literally clapping your hands with the dough sphere in between (sounds easy but takes skills)
7- Once you have the flat circular uncooked tortillas put them in the "comal" (or just a regular pan), it has to be VERY hot (so hot the tortilla sizzles at the touch of the pan). Now ATTENTION -> Leave on one side for like 30 secs then flip and leave for other 90 sec until lil pockets of air start forming inside, flip again and lightly press the center and it should inflate like a mf blowfish, I tell ya, if it doesn't happen you're doing it wrong! (This allows the inside of the tortilla to cook eavenly with its own hot steam plus it just looks beautiful) leave it there 30 more secs and it's ready.
8- Done. Easy! You have a tortilla!
9- Eat soft for tacos, fry them for totopos or chips, toast them for tostadas or just roll them with a pinch of salt inside and have as a basic mexican tortillería appetizer

I think he meant trying to eat it as a taco, instead of with a fork. The lady said you could eat the second taco with a spoon or youd need a big mouth to be able to bite it, so in that case he is correct in using "tratar".
