I catch crab. Do i clean and cook the crabs before i make the cakes or just clean them?
Blue crab makes better crab cakes than dungeness crab. I’m from Maryland and I know crab cakes.
Just made these yesterday and they came out so amazing. Best crab cakes I've ever had in my life and you taught me how! Thank you Chef John! I also made your crab stuffed cornbread muffins and those did not disappoint either, though the cakes were my favorite by far.
Been watching your channel for about seven, eight years. Any time I look for a recipe, I always check food wishes to see if you have it first!
You can also refrigerate them for a little after you form them into cakes. This will keep them together before frying.

This looks amazing; it is so aggravating not living by the coast when you do recipes like this. Living here in Colorado it is tough to find good Crab, and when you do the price is outrageous.

How about using good canned crab cake ? Our neighbor just made some with canned meat and it wasn't bad. Beats not having any crab cakes - Right ?

Looks so good. Love the 97% crab mixture. I had some crab cakes with too much cake before or the crab was too chopped up. Making your own chunky crab cakes is the only was to go I see.

Made this today. My lady and I loved it. I recommend adding a bit more crumbs and leaving the mix in the freeze for 40 min. I had no problem forming them into Pattie’s and 80% of them actually stayed together during cooking

I'm a Marylander born and raised, and I agree -- there's just nothin' like Old Bay. And for any of you who haven't used it much, it isn't just for seafood. Try rubbing a generous amount on a chicken, then roasting it stuffed with lemon and a little garlic ........ it's out of this world!!!

I’m in Maryland, which known for it’s ‘blue crab’.
I’m going back to the 60’s when my grandmother would do crab cakes. She would never use a ‘filler’ in her crab cakes. She would use 2 beaten eggs per pound of meat (a mixture of lump and pieces just as you did). To the beaten eggs a tablespoon of Old Bay seasoning, a tablespoon of parsley flakes. About a 1/2 inch of vegetable oil in a frying pan, get it hot, form her patties, and fry each side. She only used the eggs as a binder.

+sandra valani Life is too short to eat crappy food. I don't put mayo in everything, but when it counts I go all out, with real mayo and real butter. Hell, sometimes I use lard too (but not in crab cakes, of course). After all, it's not like I indulge in crab cakes every day.

I'm from Maryland. I know Crabcakes. These are EXACTLY how we make them in the big MD. SanFrancisco? Who knew?
+Bill Blast ~~ you think it's dumb to try to preserve the integrity of the claw meat? lol, it's phenomenal to bite into a big lump of sweet crab! especially @ 30 bucks a pound . MD style crab cakes rock and mr food wishes is doing it right.

~~ hell yeah it's too expensive. why? over harvested the bay? growing up in a working class family in MD in the 60's/70's crab was plentiful and affordable. dad would buy 1 or 2 bushels of live crabs and we'd have a crab feast that day and in the next days he'd make crab soup and crab cakes with the leftovers. amazingly delicious and so many great memories. crab is now an extravagant treat i might feed my family once or twice a year.
rabs are $20 a bushel for number 2 right now and sooks must be $15 and you'll get 10 pound of crab meat out of a bushel and you can't bet that. You can also use the claw meat to blend in with the special crab meat.
i mean.... not really. Chef John is using Dungeness. A VERY different style crab. Born and raised in Annapolis MD and my sister lives in Seattle WA. Not hating on the video Chef John, just not a MD style crab cake by any means. I have made Dungeness crab cakes while out visiting my sister. They are very good but no quite the same.

I live on the West coast and have never tried a crab cake.......I love crab and prepare it often (with some drawn butter or as a salad) but THIS looks like a great idea for a nice change. Thanks much.

Chef John is spot on with this one. Foundation of ANY great crab cake is it must be almost entirely crab meat. So many times disappointed at restaurants that use too much bread crumbs.

okay don't shoot me but i am poor and made this with the canned lump crab yesterday and it came out fabulous! (had to remember to squeeze out excess water) To add more volume since i had 6 guests i added cut up Portebella mushrooms ugh sooo good! I also used seasoned panko bread crumbs for the outside and some inside. i then made them semi thin to look bigger. Someone was dipping them in cucumber ranch and it was amazing!

Looks great, I'm so going to make this dish tomorrow. I'm such a seafood freak. Since I'm making dinner for two mind as well make 4 soft shell crabs I have with Scallops, and shrimps in scampi sauce with sweet potatoes french fries wedges or steamed green beans with pilaf rice

I use refrigerated lump crabmeat in the clear plastic tub with a metal pull-top under the lid, from Sam's Club - I guess that's canned but it's far better than store shelf metal cans and it's the best I can get in the Midwest. It worked great in the crab rangoons last New Years so I'm guessing it's worth a try here.
