Being a fellow chef and a Marylander, there is a simple explanation as to why crab cakes, especially in Maryland, cost as much as they do. For starters, it is all about the crab meat. Many places will buy the pre-picked crab meat which in itself has a wide range. Often times it is shipped into the country from Mexico or Venezuela where they have a different picking process which ends up watering down the crab meat, taking away from the flavor. What you purchased (lump) is also some of the lowest grade. Lump is often used for at home or at restaurants that are trying to cut costs. Many traditionalist joints will use 25-50% lump in order to help bind the crab cakes with the rest being jumbo or super lump which is sweeter and also much more expensive. You also need to check what kind of crab meat (species wise) that you get. A true Maryland style crab cake will always use blue crab which is also often found in New Orleans style crab dishes as well as in low country style cooking. All of these factors lead to a higher cost. I've been at some places where 2 crab cakes would run $20+ dollars and that is at a food cost of over 45%. It doesn't help that the cost of crab has skyrocketed due to over harvesting and a lack of workforce to pick the crabs but that is a whole different issue. Overall point being, yes you can make a good crab cake for cheaper with some other added filler, but it just isn't the same as a pure crab meat crab cake. (This coming from someone who has worked at what has been voted Baltimore's best crabs and crab cakes for several years running)
Josh I made my wife these crab cakes tonight for Valentine’s Day. They were a huge hit and so good! I did need more breadcrumbs to form the cakes but it all worked out and they are amazing!
The cheapest crab cakes are made from the crab you catch yourself. The price: a case of beer and a pack of chicken necks. You even get a sunburn as a bonus.
@slade good That is entirely true, I did some crab foraging in my life, where my grandparents live. They have a few areas with shallow waters that used to have a lot of'em (but not anymore because pollution). That said, it only works for someone who lives in the right areas, sadly ^^
Joshua: Noticed a little bit of the cakes falling apart in the pan. That's sometimes a side-effect of pan frying. Might I suggest an alternative: 450 degree oven; form cakes by pushing the mix into a 1/2 cup measuring cup (hopefully a nice square-sided metal one) and place them in a buttered (yes, buttered, ya dirty scoundrel) rimmed baking sheet. Melt some additional butter to drizzle atop the cakes. Pop them in the over for 12-ish minutes or until golden brown and crispy all around (yes, even the sides a little!) and VOILA! No batches, no waiting, they all come out wonderful
There's also something to be said for "what is your time worth?" The fresh picked crab is more expensive AND takes more time ... I really want crab cakes now though ...
Tbh canned crap works just as well since it’s a cake 🤷🏻♀️ plus I’m positive they don’t sell fresh crab anywhere near where I live 😂 it’s $4-$5 for 6oz at my grocery stores. Just probably don’t add any additional salt since canned food is usually pretty salty already.
I’ve gotten crab claw meat from Imperfect Foods in the last couple of boxes. Yes, it frozen, but it’s claw meat, it’s in a one pound package and and it was $12. I realize that it won’t be as good as if I’d steamed it and picked it myself, but the price/value (yes, it’s good crab) is well worth it. So is it crab cake time? Hell yes!

being from MD i will say this. Prepicked Lump or Backfin is the way to go. yes it is expensiveish....but thats where you get the largest chunks of meat. AKA when you make the cakes and those large pieces remain whole you know you arnt getting skimped. You can also broil them in an oven but..i mean pan frying. cant beat that extra layer of flavor.
I actually use canned shredded salmon sometimes! I know it's not crab-adjacent, but it is the cheapest option and with some roasted red pepper or scallion mix-ins, it gets the job done. :)

The entirety of my homes has always been in Pacific Northwest. Our special time Christmas time dinner was always Dungeness crab, garlic, and lots of butter. I swear we are not simpletons. Just experience of bringing crab home, caring for them, killing the nicest way we can, cooking, and eating. The whole experience is wonderful. This Christmas, I've wanted to do something special for my Mom. Maybe we'll break out of our routines for 1 or 2 crabs.

You will probably never see this, but I loved the recipe, I used dungeoness crab. Just wanted to thank you by pointing out that you used only 2 TEASPOONS of mustard in the remoulade on the video; but on your written recipe in the description it says 2 TABLESPOONS. It was a little mustardy but it's all good haha.
Being from Maryland I have to throw a little shade. If you ever get the chance to go there you need to try Kokos crabcakes. It has much less filler and much more "chonks". You can do it with virtually no filler. But I really like your channel. Keep up the good work.

Comparing Dungeness crab to unknown, although probably blue crab from Maryland south to the Louisiana coast. Big difference in size of lumps, which taste you prefer is up to you. Currently (April 2022) a single 4 ounce blue crab cake at a restaurant runs from $20 to $35 EACH!
As a person who enjoys and has tried you recipes, I am utterly ashamed that there is no Old Bay. This is a staple in any quality crabcake. Sincerely a Marylander
I got a cheap recipe but instead of crab I use catfish fillets chopped up. I know the whole point was to still use crab, but it’s a similar seafood flavor for way cheaper. Catfish are free they’re everywhere, plus green pepper, red onion, pancake mix, eggs, and spices. Really cheap and really good.
To everyone who is going to make this, ADD OLD BAY! that'll kick it up a notch. old bay is salty, so instead of salt, add old bay instead, but add a little more (or a lot more) than the measurement listed. or you could make these as shown, but add old bay to your sauce. either way, old bay and crab were made for each other. aside from the lack of old bay, josh nailed it! edit: old bay can be found in the seafood section of all grocery stores, or in the seasonings section.
Okay so these are obviously not salmon patties, but they look a lot like salmon patties, and salmon patties are like a childhood favorite of mine, so now I really really want crab cakes AND salmon patties.... ughhhh 🤤

But I hate shellfish, and for a long time i associated Old Bay with gross fishy fried seafood smell. it's a bit overrated, but it is designed to dominate bland food, I'd think it belongs oa Bloody Mary if I didn't grow up with regional people making it seem seafoody.

From Maryland here, it isn't real crab cakes unless it's crabs raised in polluted Chesapeake Bay water and covered in old bay.
We put the Old Bay on it to cancel out the taste of pollution.

Being from Maryland I have to throw a little shade. If you ever get the chance to go there you need to try Kokos crabcakes. It has much less filler and much more "chonks". You can do it with virtually no filler. But I really like your channel. Keep up the good work.

Comparing Dungeness crab to unknown, although probably blue crab from Maryland south to the Louisiana coast. Big difference in size of lumps, which taste you prefer is up to you. Currently (April 2022) a single 4 ounce blue crab cake at a restaurant runs from $20 to $35 EACH!
As a person who enjoys and has tried you recipes, I am utterly ashamed that there is no Old Bay. This is a staple in any quality crabcake. Sincerely a Marylander

I got a cheap recipe but instead of crab I use catfish fillets chopped up. I know the whole point was to still use crab, but it’s a similar seafood flavor for way cheaper. Catfish are free they’re everywhere, plus green pepper, red onion, pancake mix, eggs, and spices. Really cheap and really good.
Makes sense, since imitation crab meat is just fish plus mirin.

I used to crush up Lays potato chips into small pieces and use it as an outer coating. Then, deep fry. Crispy crunchy golden goodness.
To everyone who is going to make this, ADD OLD BAY! that'll kick it up a notch. old bay is salty, so instead of salt, add old bay instead, but add a little more (or a lot more) than the measurement listed. or you could make these as shown, but add old bay to your sauce. either way, old bay and crab were made for each other. aside from the lack of old bay, josh nailed it! edit: old bay can be found in the seafood section of all grocery stores, or in the seasonings section.

San Francisco's Dungeness crab is the best dude. Sorry, hands down. And the crabs aren't republican...thank God. They're gay even, I think.
@@invgyuu think mostly spicy paprika, nutmeg, and a hint of celery salt. I find it takes getting used to, but i can enjoy it on French fries now. But I hate shellfish, and for a long time i associated Old Bay with gross fishy fried seafood smell. it's a bit overrated, but it is designed to dominate bland food, I'd think it belongs oa Bloody Mary if I didn't grow up with regional people making it seem seafoody.
