Pomona's pectin doesn't ever go bad. That helps justify the price. Mix small amounts of calcium water and it will keep in the fridge, but for me, small amounts are easier to keep in the fridge. You will not be able to sub low sugar pectin for the recipes because the whole process is different. The book is pretty good, but you will find you can't substitute.
I bought the Pamona's pectin last year from Azure along with the book. I really liked the jam/jelly I made with the very low sugar. The one thing that amazed me about the Pamona's is that it lasts forever! Normally, I buy pectin and end up throwing about half of it away since where I live I can't always get the low-sugar boxes. It's more expensive, but since I won't be throwing it away, I think it is a great product. I'll be making more jelly/jam in a few weeks, so I'll know for sure that it didn't "go bad".
Thanks for sharing your haul. In the process of ordering Azure for May drop. I just NOW, minutes ago, received my new grain mill. My Whisper Mill is about 23 yrs old. I'm replacing with Nutrimill, and passing the WM to our daughter. I had no idea the Nutrimill was so big 😮 But. Very excited about it being all one unit. I will definitely have to rearrange countertops to keep it conveniently available.
dont forget to try some of the sweet creek products azure sells . the mushroom tomatoe sauce is awesome and the jellys are all great , simple to , sugar pectin fruit
I heard you say that we need to freeze and then store our rice and corn. My question is does that corn also apply to popcorn kernels or no? Popcorn kernels can be stored right away without freezing?
Do you find that brown rice stores well? I struggle to store brown rice long term because it goes rancid because of the natural oils… I really want to store it long term but I had to dump a whole 5 gallon bucket. :(
Yes….make ghee yourself! Just take a big pot and throw all that unsalted butter in it! Rose red homestead has a great video on it! Home made ghee is cheaper than avacado oil, so I use it a lot.

Ghee is very easy to make. It will save you a lot of money. Please research how to make ghee. All you have to do is cook your butter on a low flame until you see the milk solids and have an amber color.

I love using ghee. It is great to sautee veggies in and I use it in my breads vs oil or butter. But I have never made it because it’s cheaper for me to buy a huge jar of grass fed ghee from Costco.
Look into it but I have read that brown rice should not be stored in mylar with oxygen absorbers because of the risk of botulism in the no oxygen environment. White rice is not the same issue. I used to store it that way but after learning that I wouldn't do it again.

Also, I make double batch, which is 8 cups mashed fruit and 2 cups honey. After the jam is made, I water bath the jars, for 10 min. Either 1/2 pint or 1 pint jars. I store the Pomona pectin , the two packets. and instruction in a wide mouth jar. A large 26 oz. Adams peanut butter jar, reused.

Whatever method you find the safest, it is a bit tricky, no doubt. I'm no expert, but this works for me.
