- Busy Saturday night at a street food joint - All'antico Vinaio - in Florence, Italy - 1 hour before closing many people are still hoping to get a Schiacciata filled tummy.
I don't care what it is, I'll take one of everything.
These guys make American fast food employees look like the "Walking Dead".
Because they care, you can see it in the way they prepare the food. They care that you don’t want to wait. They care that you want something delicious and appetizing.
American fast food employees are pretty fast. The thing is the food they make is trash compared to this.
For Truth they don’t put all the additives that the food industry in America does.
Probably because these people live in a much better country than America. How can you expect 9-5 drones being paid 8$ an hour to care?
@@Zarrakon do you think this Italian guy gets paid well?? Not every place in Italy treat well people and not all the food looks as good as this one.
I still remember getting to Florence by train and getting into a cab with my huge bags and telling the driver to take me straight to All’antico because I had heard so much about it and he couldn’t help laugh and ask “but what about your bags?!” WELL worth the journey with the heavy bags standing in the street and eating. Stunning country, nicest people! I hope I can visit Florence again someday ❤️

All' Antico Vinaio is the most reviewed place on Trip Advisor, It has the world record. And of course here in Italy is a must for every sandwich lover.
I haven't noticed anyone comment about his knife skills. As an amateur fishmonger it's so amazing to see this guy work. How precise and efficient he is at cutting. Also he practices good knife safety, always turning the blade away from him towards the counter, and just the speed he does it! It's mesmerizing.

Just got back from Florence last week...I ate there. It was great! They actualy have 3 store fronts and each one had a line...and this was on a Tuesday. Very few places to sit inside. Most of the people just sat the curb in front...thats what I did, with a beer. And at the end of the street is the Piazza Vecchio with all the great statues and the Zeus Fountain.
What was the price?

@@gagarinbjj I can't imagine a schiacciata worthing more than 7-8 euros, in Florence. That price (7-8 euros) is the price of a full pizza served at the table.
@@lorenzoamato953 Unfortunately this is the ugly truth. Here a pizza for a whole table, lets say for 4 people can cost you from 6 up to 15 euro. But I think the reason is that our "pizza" has too much stuff on it. Sometimes even 6-7 different ingredients + the salsa and cheese.
And of course gastro here is not ashamed to ask sh*t ton of money for fancy food.
SERIOUS Knife mastery on display here, low key but consistent confident and keenly honed.

never understood when american say ''Italian Bread'': in italy we do not have one ''italian'' bread but many kinds of it. Only in Rome we have 10 different types. By the way, thank you to appreciate our food. in Campania Region we have Mozzarella made with cow-buffalo milk: wonderful (and expensive!)!

It is usual baked in the form of a roll an is often used to dip in pasta, soup or to make sandwiched. It is called Italian because this is what the Italian immigrant bakers made when they came to the US. Look at the Amoroso baking company here in Philly.

As someone who has worked in the service and food industry, this is so satisfying when I see the "well oiled machine". It's partly muscle memory and situational awareness along with presenting a friendly face to the customers because that is the highest priority. I love these guys and watching them kick ass

Pandemic still happening and my flight leaves to Milan on Tuesday, then to Venice, Florence, Rome, Naples, and Athens. Pandemic hasn't stopped me, in fact it's better because there won't be any crowds!

I've been to Italy in July 2019, spent 5 days in Florence and basically only ate there.

Unfortunately but not surprisingly, there are a lot of tourist traps in Florence. If you go to the right places, it will be amazing. Try genuine Tuscan specialties like schiacciata, ribollita, pappardelle alla lepre, pici with some sort of tuscan style ragù, lampredotto, porchetta, peposo, acquacotta etc. Do your homework! Study Tuscan cuisine a little and find out which restaurants etc. are recommended. A personal favourite of mine is Cibreo trattoria in Via dei Macci, 122r, but there are hundreds of good restaurants in and around Florence. Do avoid places that serve fake Italian food like spaghetti bolognese and pasta chicken Alfredo. Such establishments are out of touch with authentic Italian cooking and view their guests as easily fooled idiots. You'll be disappointed.
I like how traditionnal Italian cuisine often has its flag color in it, Red = tomato, white = cheese, green = herb

I was here last month, food was good and it was only €5!

In the 30 or so years I spent in the U.S. I worked jobs in that restaurant industry ranging from dishwasher to GM before going on to a more fitting career and have seen more than enough of the American work ethic.
Granted, there are plenty of honest, hardworking citizens in that country, however, over the past two decades, that ideology has shifted from working hard at whatever job to make ends meet, to a lazy, "someone will take care of me" attitude like they all believe they will become stars or entrepreneurs and have a family savings to back them up.
I bet even you would rather worry about money than work flipping burgers. 😂
Here's the thing, young American, I didnt disparage a whole nation making a snide drunken comment in response to a dumb naive comment on UA-cam and you really dont need to get worked up.
I doubt you have had the chance to look at high employee turn over in "good restaurants" because the work is demanding and most cannot take it. Thats drastically different than in Euro countries where its pretty low because hopeful culinary assistants can take more verbal and physical abuse and won't run out screaming "lawsuit" when there is a bad service and the chef gets pissed.
Try seeing more of the world instead of through a tv/computer in your room and then see how jaded your opinions become.
A true sandwich master knows that you must slice all ingredients fresh when you are putting it together.

They are opening a location in Las Vegas at the end of the month. Far off the strip and 10 minutes from my house. I've never been so excited about a new restaurant.
I was there June 2019 the local shops suggested to try this place. I tried the lampredotto it was so good! The long line was worth it!😘
