how would you write a UK address in click-n-ship? since it seems like it only allows USA addresses
You can select the country you're sending it to in the drop down menu for that section and you should be able to put in a UK address. That's what I did for our International Click-N-Ship how-to: ua-cam.com/video/54ujiw9YWbM/v-deo.html // Also I briefly show how I wrote the UK address for a physical customs form here: ua-cam.com/video/ydRbj-TKHa0/v-deo.html

Can you use 3 us forever stamps to mail to canada?
To ship an envelope weighing less than three ounces to Canada, you will need $1.20 in postage. You can use one Global First Class Forever stamp ($1.20) or three First Class Forever Stamps ($1.65). If your envelope weighs more than three ounces, you will need an additional $0.49 in postage for every additional ounce.

Can someone help me please? I have a friend in the UK and I am trying to send them a card. They gave me [street number and name] Le3 1be Leicester Leicestershire. I am very confused on how to address the envelope.
Le3 1be would be the postal code, Leicester would be the city/town and Leicestershire is the county. You don't necessarily need to put the county though. So I think your address should look like this:
Name
Street number Street name
Leicester Le3 1be
