  • For Chinese fried rice lovers. Here another fried rice cooking that you will like. No soy sauce, oyster sauce or Hoisin sauce added to maintain natural steamed white rice look. Enjoy. Below are the list of ingredients. Again thru the courtesy of Mr. Michael Taylor. Who type those list in his comment, so you and I can COPY-PASTE-PRINT the same. ( make Thanks to Mr. Taylor for his effort )
    List of Ingredients: * created by HAPPY WOK *
    as needed cooking oil
    2 pcs ----- eggs
    5 oz. ----- shrimp shelled, de veined & slice into 3 pieces)
    1 Tbsp --- each, ginger & garlic (minced) (for shrimp)
    1/8 tsp --- salt for shrimp cooking
    1 cup ----- shiitake mushrooms (fresh, diced)
    3/4 cup --- carrots & peas
    5 oz. ------ char siu (aka Chinese pork BBQ, diced)
    6 cups --- steamed jasmine rice (day old)
    1/2 tsp ---- salt (for seasoning)
    1/4 tsp ---- white pepper (for seasoning)
    2 stalks --- green onion (chopped)
    Note: no soy sauce, for rice to preserved white natural color.

    Excellent! Looks delicious. When I make this, I use soy sauce instead of adding salt, and I love onions. After removing the shrimp, i would dice an onion and cook it till its softened and slightly burnt, then add the ingredients as shown. I also like it a bit crispy, so I let it sit on high heat for 3-5 mins to get the bottom crispy.

    LoL I was ready to eat the eggs just as they were, before you chopped them up :) And I'm pretty sure I can figure out how to add the soy sauce, so this is a great recipe :)

    Hello again my favorite Chef!!! May I use Basmati rice instead of jasmine rice? I can’t cook jasmine rice for my life- always comes out sticky and gummy. I love the ingredients and the technique of this fried rice.Thank you again Chef!

    This dish is called yangchow fried rice. The key is no soy sauce so it has a light color texture. The mushroom is something extra. Also in China they use Chinese style ham instead of Hong Kong BBQ pork for the protein and the rice is often cooked with pork lard to enhance the flavor.

    Lower Sodium for sure!! Chinese Sausage is a good sub for the BBQ Pork. Hope your ready for Football! I think larry fitzgerald is going to stick with Golf.. No idea how Denver is going to look.

      Yes, I usually used a pinch of salt just to have minimum taste. Sodium not good for our health. Yes, Chinese Sausage are good substitute for pork BBQ and convenient too. I hope your Bronco will make it to playoff. So, it will be exciting to watch the games. Thanks for watching.

    Wow awesome! I wish I could make this right now. When I make fried rice the rice sticks to my wok, maybe I don't use enough oil, or maybe heat is too hot?

      Make sure your day old steamed rice is dried up. Use jasmine or long grain rice, with 1 to 1.5 ratio. And add a little more oil to your wok. Thanks for asking . Thanks for watching.

    That looks delicious chef! Thanks for sharing. The food you make always looks delicious! Unfortunately, whenever I attempt to make fried rice (with day old Jasmine rice), it always ends up getting soggy :(

      Oh no! Try reduce your water when cooking for steamed jasmine rice. When cold. transfer to a flat plate. Spread it out to dry up inside the refrigerator for a day or two. Then take it out and rub lumpy rice between your palm to separate. Or try use brown rice to make steamed rice. They are less sticky ( since they contained a less gluten ) thanks for watching.

    *Very nice! Coincidentally, I was thinking about making a similar fried rice for lunch. I would NEVER add any soy sauce, oyster sauce, or Hoisin sauce to fried rice. Authentic Cantonese fried rice should be white.*
