1 Tbsp --- each, ginger & garlic (minced) (for shrimp)
1/8 tsp --- salt for shrimp cooking
1 cup ----- shiitake mushrooms (fresh, diced)
3/4 cup --- carrots & peas
5 oz. ------ char siu (aka Chinese pork BBQ, diced)
6 cups --- steamed jasmine rice (day old)
1/2 tsp ---- salt (for seasoning)
1/4 tsp ---- white pepper (for seasoning)
2 stalks --- green onion (chopped)
Note: no soy sauce, for rice to preserved white natural color.
Excellent! Looks delicious. When I make this, I use soy sauce instead of adding salt, and I love onions. After removing the shrimp, i would dice an onion and cook it till its softened and slightly burnt, then add the ingredients as shown. I also like it a bit crispy, so I let it sit on high heat for 3-5 mins to get the bottom crispy.
Chef does that too what you said. You can check his previous videos. This is the classic style of fried rice he has shown us. Simple but delicious.

LoL I was ready to eat the eggs just as they were, before you chopped them up :) And I'm pretty sure I can figure out how to add the soy sauce, so this is a great recipe :)
Sounds good! Some modification is always welcome. Just watch the sodium , might be salty. I know you will. Thanks for watching.

Very classic dish Chef. I love having rice with any dish. I plan to make a zucchini stir fry this weekend once my mother in law is discharged from the hospital.
Thanks. Nice to know your Mother-in-law will be home from hospital. Making that Zucchini Stir fry sound delicious already. Thanks for watching.
Hello again my favorite Chef!!! May I use Basmati rice instead of jasmine rice? I can’t cook jasmine rice for my life- always comes out sticky and gummy. I love the ingredients and the technique of this fried rice.Thank you again Chef!
Best health to you from your Greek friend in New York City
Yes. You can use basmati rice. Thanks for asking. Thanks for watching again. My dedicated follower.
This dish is called yangchow fried rice. The key is no soy sauce so it has a light color texture. The mushroom is something extra. Also in China they use Chinese style ham instead of Hong Kong BBQ pork for the protein and the rice is often cooked with pork lard to enhance the flavor.
Thanks for that info. And also Thanks for watching.
Lower Sodium for sure!! Chinese Sausage is a good sub for the BBQ Pork. Hope your ready for Football! I think larry fitzgerald is going to stick with Golf.. No idea how Denver is going to look.
Yes, I usually used a pinch of salt just to have minimum taste. Sodium not good for our health. Yes, Chinese Sausage are good substitute for pork BBQ and convenient too. I hope your Bronco will make it to playoff. So, it will be exciting to watch the games. Thanks for watching.
Wow awesome! I wish I could make this right now. When I make fried rice the rice sticks to my wok, maybe I don't use enough oil, or maybe heat is too hot?
Make sure your day old steamed rice is dried up. Use jasmine or long grain rice, with 1 to 1.5 ratio. And add a little more oil to your wok. Thanks for asking . Thanks for watching.
That looks delicious chef! Thanks for sharing. The food you make always looks delicious! Unfortunately, whenever I attempt to make fried rice (with day old Jasmine rice), it always ends up getting soggy :(
Oh no! Try reduce your water when cooking for steamed jasmine rice. When cold. transfer to a flat plate. Spread it out to dry up inside the refrigerator for a day or two. Then take it out and rub lumpy rice between your palm to separate. Or try use brown rice to make steamed rice. They are less sticky ( since they contained a less gluten ) thanks for watching.
@@HAPPYWOK Yes, I think I put a bit too much water in when making my rice. I’ll try putting less water in next time. Thanks for the tip chef! 👍
Did you used to cook in a Chinese restaurant? I think I remember you saying you did.
Yes..I did in NYC Chinatown. Retired 10 yrs ago. And we used to have Chinese restaurant back home...before immigrating here. Established by my departed parents in the 60's. Thanks for asking. Thanks for watching.
Adding crushed peppercorn helps

*Very nice! Coincidentally, I was thinking about making a similar fried rice for lunch. I would NEVER add any soy sauce, oyster sauce, or Hoisin sauce to fried rice. Authentic Cantonese fried rice should be white.*
Sounds great! Make some today. Yes, I agree. Fried rice best looking when those steamed white rice , still attend it's original color. Thanks for watching.
it would be nice to have happy wok give us the amount of ingredients...ex: how many grams or oz of each and table spoon / teaspoon measurements
They are listed at the very last part of my cooking video. Thanks for asking. Thanks for watching.

No msg, soy sauce, sesame oil, or chicken stock?
No need. Basically it retained the true white color of the steamed cooked rice. Thanks for asking. Thanks for watching.
Where is the soy sauce?
Sorry , no soy sauce here. This version to to maintain the natural white rice color. But you can add soy sauce by the way. And eliminate salt. Thanks for watching.
Not in this version, where we like to preserved the steamed rice white color. Thanks for asking. Thanks for watching.
@@HAPPYWOK i 💕 soy sauce. I'd prefer soy sauce than salt. I like watching your videos. I learn something everytime. 🙏
