Just cooked it with beef, just delicious... I really like you do not "water down" the original receipe beforehand by using only (in europe) commonly used spices. People who cook such stuff are possibly well equipped. I missed only the cashmiri red peppers but they are mainly used for colour... Making the garam marsala freshly is better for me because all ground spices will not retain taste very long. No problem if you use it up daily in India.... If you use yoghurt to marinade the meat, just rinse and dry the meat before frying, else it is hard to fry it properly. I always wonder what ammound of sice goes into such dishes - and it does not taste strongly for one of them...

Great clip, Bumbi, not forgetting any details on how to make this very good dish. With age I have moved away from very spicy Vindaloo, Madras and Saoji preps etc. I make this with lamb, mutton or goat and youghurt, sometimes adding some coconut milk or grated coconut and even some dried raisins or fruits, (Seychelles style). Preferably meat with bones and cook very slow for hours. Yes, the gravy should become thick. Keep the clips coming Bumbi, I watch them all and always learn something new. P.S. had a farm for 20 years with many sheep and goats etc. Made a lot of curries :-)

There is a lot of nonsense & clueless cooking happening on UA-cam, this stands out in the positive sense; technically all of this makes sense, the flavors are well balanced, not overcooking the onions and allowing them to caramalize slowly, the final addition of spices towards the end, everything here is right. Ok one point since I am naturally pedantic; I don't think black cardamom is optional, its too distinctive (I also get pretty upset when I am served chole without it). This is mouthwatering and I will be cooking it at home very very soon. Many thanks for sharing, you have a new follower.

Very nicely done. Few tips based on my 35 + years of commercial cooking from Bombay IHMCTAN & PUSA institute, besides 5 star hotels 1) add poppy seeds (khus-khus) 2). Marinade meat in yogurt ( as we in the early 8os called CURD) 3) best made in open utensil cooking Vs. Pressure cooking. However, you get 4 stars the way you displayed. And, this comes from an extremely old fashioned DESI food since the late 70s. Best and good to see your wonderful recipie and I MEAN IT. I don’t mince words.. FYI

Got some from restaurant other day and it was amazing , I bet your Korma is amazing also . So over butter chicken , nice change from all that sugar and tomato sauce sort of flavour . I was stuck on butter chicken like some sort of junkie for years . But once I tried that Korma the other day , that's my buzz now lol . I think Korma is much healthier than butter chicken .

I’ve just made it in a wood fired oven, turned out nice. I especially liked the yoghurt at the end with the onions and dates(I only had figs, it was nice with that also). I would boost the sourness maybe, the onion turned it really really sweet despite the yoghurt.
Hey Bumbi. I'd place the fried onions pressing into a tea strainer or small sieve to drain the oil off. Rather than lose all that aromatic oil into the kitchen paper! You could then use that oil for another curry or pour over boiled potatoes. Just a tip from another home Cook.😊
I had to head out this morning before I could watch but saw lamb in the title. I ran into Costco and got a nice leg just for this as every single lamb recipe you offer has been amazing! Since it was Costco, the leg is huge. So can I freeze half of the korma once I make it? I always wonder if your recipes would freeze since we are a household of two 💕💕💕💕
Yes surely you can. I would suggest to blend them using oil instead of water. Then you can divide them into portions and freeze them. You can also freeze them in ice cube trays.
I have many type of pressure cookers 😀. In this video I used Fissler pressure pan. I even use Instant Pot daily. Instant Pot is a good one for those who are new to handling pressure cookers.

"Korma" in the UK & the rest of Europe is a totally different thing LOL. It's like a sweet cream sauce thickened with cashews & other nuts...

You can definitely freeze this. How can you cut that huge leg of lamb . I always wanted to buy but always get scared seeing the huge portion.
