You are very correct about toasting the spices. I've learned this from my own experience. The aroma of freshly toasted spices once you mash it in your mortar is absolutely next level.

I take a whole bunch of coriander and mix it with a package of cream cheese in the food processer - process until smooth, add salt and pepper and a small chili for heat if you fancy.. Makes an easy, flavourful spread for crackers, bread, sandwiches. Thank you, great recipe.

I have been meaning to make this recipe for a few months, but didn't until today. I added a small Forelle pear to the marinade for a different sweetness. I also used jaggery instead of a traditional Western sugar. It came out fantastic. Another inspiring recipe Bumbi.

totally agree about incorporating salt in different stages of cooking - cilantro paste almost works like sofrito with maximum flavor coming from stems and not just leaves - dry roasting and grinding fresh masala is the professional touch - your red mirchi tadka was subtle spin to finish off this chicken curry - yet one more winner for you

I never thought of blending the coriander leaves, just gonna try this now :) A couple of questions not related to this recipe : I've come across a few recipes in my indian cooking books that use almonds for the tikka masala but noticed you didn't use them in your tikka masala video, are the almonds just a possible variation in some parts of India or more like a "european" version that doesn't actually exist much in India ? Question number 2 : do you make your own curry paste ? I've been making some from my books for a few years but I'd be curious to see and try your recipe if you have one ! Tikka Masala evolved in the West. Usually no nuts are used in this recipe but you know recipes change depending on preference, but I prefer not to use nuts. Regarding curry paste, you will see in all my recipes I build up a curry all fresh. That is how it is done in all Indian households. People sometimes get confused with restaurant style food and actual Indian home cooking. There is a lot of difference. In India people grind fresh ginger garlic and build up a curry based on fresh ingredients and each curry varies with the usage of different spices. There is no curry base or paste involved. Yes I do grind all my spices at home, like I never buy store bought garam masala powder, neither do I buy coriander/cumin powder.My channel is more about Indian homestyle cooking. Do you find using the butter a better flavour than using ghee ?.
Ghee has a completely different flavor than butter and both the flavors are great. You can even use ghee.
