Setup was over 10.5:1 so duration was not too much, also its a small block and still made peak power pretty low in rpm range. If this was solid cam, and good adjustable rocekrs were used results would have been much better. Also I believe 750cfm is what factory put on 340. In this day and age, if you believe the magazines and tv shows, 400 hp should be a piece of cake. But I'm sure the owner wants it to have decent manners, driveability, good vacuum, etc. More cam might mess that up. But those new Trick Flow 190cc heads should be good for another 30 or 40 hp, with no penalty other than cost. And it's a shame the guy didn't request a stroker crank. You should consider getting a set of 4 each of the high speed bleeds, .005" larger and .005" smaller (for your shop Holley HP carb), they tend to influence the upper RPMS and are a fine tune item. A big plus is they are super quick to swap out. (I use them as a quick test to see if the engine prefers a slightly richer or leaner tune up during initial tests)
For your viewers, that last 5 HP to achieve your goal can be the most difficult numbers to achieve, and you may never get there. Some times a colder coolant temp and a shorter run (Nick could start at 4000 for instance) can give you the brag number you're looking for.👍
