The 1st cut I've tried was a Sirloin steak, but I found the fat content too overwhelming for me and missed the texture. Since then I only buy tenderloin with good marbling.
Wagyu farmers and these restaurants should be very thankful to you for promoting this amazing beef!

I was a little surprised when the chef left the bits of Wagyu fond on the Teppan when cooking the fried rice. Though that may be a little low-brow for that establishment. I would have politely asked for them to be mixed in the fried rice too. I will say her cooking skills showed a great reverence for the food as she prepare it, I would love to have experienced her Teppanyaki!
