I’m always so amazed on how the Japanese always put so much emphasis on presentation and quality in everything they do down to the last detail but it’s especially prevalent in their culinary dishes. This chef is clearly a master of his craft.
Wow more than his passion & craft, the way his restaurant is looking i like a lot, there is a real vibe between giving the customers a professional look & a very cozy one at the same time. Props to him for the very hard work of making it there & we can just wish he continues

As a Dutch person, I would definitely choose to eat at the chef's after watching this video and take part in the real Japanese kitchen. Enchanting how the chef works. Seeing the dedication and hard work paying off is awesome. 😄 You can see that this guy is not doing this half-hearted. Oharano (where he went to get the bamboo shoots) near Kyoto is simply beautiful. :) I was there as a tourist in Kyoto and visited Oharano shrine and went to another beautiful town near Kyoto to the north named Ōhara (formerly known as Gyoza) and visited the Sanzen-in temple which was breaktakingly beautiful as well. If I could afford to buy a place in the area, I would love to live in Kyoto. 😊

元は江戸の町奴の文化だから 東京の下町ならウジャウジャ居るけど
和彫りは元々はカタギの町火消が褌一丁の体を補うために体に着物を彫ったのが始まりなので元々は町火消の文化ですよ。
関西でも大阪とか特に商人や職人がとても多いですからカタギの和彫り入れてる人いっぱいいますよ。
