How to MINI MEAL PREP | cook 3 days of food in 1 hour with me

  • Want a fast meal prep? Want an easy meal prep? Want a delicious meal prep you won't get bored of? Then you're gonna want. to go for a mini meal prep! Let's dive in.
    //NON-RECIPE RECIPES - we meal prepped enough food three days in one hour and it was tasty and fun, so here’s a loose outline of what we did in today’s mini meal prep and a game plan in case you’d like the play by play! As a reminder, I measured most everything with my heart and you should too, but I’ve provided guidelines in case you’d like to recreate any of these dishes (or the entire mini meal prep!) to your own liking at home!
    Chilli-ish Homemade Beans
    Soak dried beans of your choice overnight, drain and rinse. To a large stock pot over medium heat, add pancetta (or a few TBSP of butter or olive oil for a veg option) and cook until crispy. Stir in minced bell pepper, carrots, celery, and onion and cook until soft. Stir in a few pinches of salt and spices to your liking (I used garlic powder, chili powder, cumin, a bay leaf, and about a half jar of salsa). Cover the beans with water plus about an inch over the beans and re-salt until the broth tastes slightly salty. Bring to a boil, then reduce to a simmer and cook until the beans are tender and the broth becomes thick.(this will take anywhere from 1 to 4 hours depending on your beans! Just keep testing them). Add additional water as necessary over the cooking time if it evaporates too quickly. Adjust with additional salt if you do this. Store in an airtight container for up to 5 days and reheat in the microwave or gently on the stove.
    Basmati Rice
    Cook per package instructions.
    Slow Cooked Green Beans with Tomatoes and Garlic
    Toss 1lb trimmed green beans with 10oz cherry tomatoes, a few crushed garlic cloves and a few really hearty glugs of olive oil. Sprinkle with sea salt to your liking. Cook in an oven at 350 until the beans are tender and the tomatoes have started to caramelize. It took my beans between 30-40 minutes to finish cooking. Reheat in the microwave or over the stove in their juices and enjoy.
    Baked Yukon Gold Potatoes
    Poke a few times with a fork, wrap in foil and bake at 350 until tender, between 50 and 90 minutes depending on the size of your potato. Serve with toppings of your choice!
    Simple Celery Salad
    Slice 1 head of celery thinly on a bias. Roughly chop a handful soft herbs of your choice (I used parsley) and toss with as much crumbly cheese of your choice (I used blue) as you’d like! You can very lightly dress with 1-2 Tbsp dressing of your choice (I used my favorite garlic-y dressing below), then dress again upon serving.
    Erica’s Favorite Garlic-y Dressing
    I like my dressing very acidic, so I use equal parts olive oil and white vinegar (about ¼ cup each), 1 heaping TBSP dijon mustard, and 1 grated clove of garlic. I finish with a pinch of salt and shake until thick and well-combined. I eat this on EVERYTHING and love it.
    French Onion Yogurt Dip
    Mix 16oz. whole milk greek yogurt with one Lipton’s Onion Soup mix packet until extremely well combined. Store in a covered container and use as a dip, dollop on top of soups, or turn into a dressing by whisking together with a little vinegar and oil (or by combining with the garlic-y dressing above) and enjoy!
    Game Plan
    1-Preheat the oven to 350
    2-Get the rice on the stove
    3-Chop the onion, carrot, celery, and bell pepper, plus celery for salad. Start the beans.
    4-Get the potatoes in the oven
    5-Get the green beans in the oven
    6-Make the celery salad & dressing
    7-Make the onion dip. Let the beans, potatoes, and green beans finish cooking, but in terms of hands-on stuff, you’re done!

    I'm loving the mini meal preps! This fits in perfectly with my work schedule. I like to cook my meal prep the day before my three days of 12 hour shifts. I do not cook after working all day. I might start a crockpot in the morning but that's it. I have been doing mini meal preps for awhile now so I'm always looking for inspiration. Please post more mini meal preps.

    Another amazing thing to add to Greek yogurt…. Trader Joe’s has a green goddess seasoning mix (find it with the spices). HIGHLY RECOMMEND!

    We're a family of five some members have dietary restrictions due to health. I've been the one tasked to cook, meal plan, grocery and wet market shop etc. I also go to college which is trimestral (each semester is less than 3 months). I've been reading up and watching videos to help me become more efficient in the kitchen and I stumbled upon your videos and thought why not learn more about meal prep whilst I'm on vacation. I guess I was just wondering if you could show us your process of meal prepping for families. Like what tools you use, how do you keep the meals interesting. How about when you have several people in the household with dietary restrictions? I know these questions might be all too much, however this could really make for a good video discussion in the future

    What a surprise! À video a day in advance!! Love your mini meal prep. I started doing that, not every week but when I find some time on the weekend. Life with a toddler and a baby is chaotic around dinner time so it’s always helpful to have some meals ready! Happy thanksgiving Erica!

    When I make dips like that I always use the exact same yogurt but I just dump the seasoning straight into the yogurt container and combine!! One less bowl to wash lol

    Loving all the content lately! I'm wondering how you deal with food waste? my worry with meal prepping is that things will go bad before I get to them and I hate throwing things out!

      I’m so happy, Amy!! So I’ve been trying to figure out how to talk about this in a more holistic way! Because I really don’t waste much food at all, but that’s come with years of practice with menu planning and meal prep remixing! I talk about remixing meal preps in my “what I eat in a week” video and that’s honestly my biggest Rec!

    So once you finish these big portions do you immediately place/portion them in the days’ specific containers or keep them in large pyrex containers till you wanna eat?

My question is, how important do you think brand/quality is when purchasing dry beans? Are generic brands okay or is it worth it to opt for a slightly more spendy brand? Thanks!

      Generic brands are generally just as good as a name brand. Very often they’re actually made in the same factory, but packaged in a different box. That means that you’re paying for the brand instead of a superior product.

      :):) so glad, katie! So I mostly agree with above, that said, what does really matter with homemade beans is that they’re not old! When you buy from a quality brand, you’re usually ensuring they haven’t been hanging out on the shelves for YEARS which really degrades quality. I’m using about 1.5 cups (before soaking) rancho Gordo beans here (some sort of pretty standard brown bean-they have a lot of varieties) - they were gifted but I’d definitely buy them again myself!

      I've actually never tried in a pressure cooker, but like mentioned in the video, these are almost completely hands off while they're cooking :)

    "Meal prep is what you want it to be." -- I like this takeaway. 💚 I've recently been interested in meal prep because I wanted the family to have healthier/cheaper meals instead of rotating around 10 recipes only and eventually doing takeouts. I'm thankful I have the downtime right now to prep every single day so the food is served freshly cooked, but I'm starting to realize that it is not ideal especially if I do become busy with work again. Meal prepping a week's worth of meals for 6 people in packed lunch style is something I'm still trying to figure out, but out of all the meal prepping vids that topped in my search, your aesthetics and tips caught my eye. Looking forward to your future vid releases whatever topics you decide. And will of course keep posted on your newsletter.
